EGGLESS CARAMEL PUDDING

Caramel Pudding — a dessert that feels like comfort and luxury in one spoonful. This pudding has a creamy white chocolate base infused with vanilla, milk, and butter, giving it a smooth and velvety texture that melts instantly on the tongue. The mixture thickens slowly on the stove until it coats the back of a spoon, turning into the kind of pudding that sets beautifully once chilled.

The magic, though, lies in the caramel layer — a thin, golden sheet made by gently melting sugar until it turns a deep amber. Once poured over the chilled pudding, it hardens into a glassy top that cracks perfectly when tapped with a spoon. INGREDIENTS USED IN EGGLESS CARAMEL PUDDING

  • Milk

The foundation of the pudding — milk gives body, creaminess, and a natural richness to the dessert. It helps dissolve the sugar and white chocolate, creating a smooth base that thickens beautifully once the cornflour is added. Using full-fat milk makes a noticeable difference here, giving the pudding a luxurious, melt-in-mouth texture.

  • Sugar

Sugar serves two roles in this recipe — it sweetens the pudding mixture and transforms into caramel for the topping. In the pudding, it balances the richness of white chocolate and butter, giving just the right amount of sweetness. In the caramel layer, sugar undergoes a beautiful transformation when heated — melting slowly into a deep amber syrup that sets into a glassy, crisp top. That caramel crack adds both texture and a subtle hint of bitterness to contrast the creamy pudding below.

  • White Chocolate

White chocolate is the heart of this pudding’s indulgence. It melts seamlessly into warm milk, adding a smooth, velvety texture and a creamy sweetness that sets this dessert apart from regular caramel custards. It enriches the flavour while also helping the pudding achieve a thicker, luscious consistency.

  • Cornflour (Cornstarch)

Cornflour is the key thickening agent that turns the milk mixture into a pudding. When mixed with a little cold milk to form a slurry and added to the hot base, it thickens the mixture evenly without lumps. It allows the pudding to set perfectly after chilling, giving you that spoonful of silky, custard-like smoothness.

  • Butter

Butter adds richness, depth, and a glossy finish to the pudding. It smoothens the texture, prevents the pudding from feeling starchy, and leaves behind a delicate buttery aroma. Stirring it in at the end ensures the pudding tastes balanced and luxurious without being overly heavy.

  • Vanilla Extract

Vanilla is what ties all the flavours together. It enhances the sweetness of white chocolate, adds warmth, and brings that signature pudding aroma that feels both nostalgic and comforting. Even a small teaspoon adds a depth that transforms the dessert from simple to elegant.

I would recommend you use good quality mixing bowls, spatula and a whisk.

TIPS TO MAKE EGGLESS CARAMEL PUDDING

  1. Heat the milk gently- Keep the flame low–medium when heating milk with sugar and white chocolate. High heat can scorch milk and split the chocolate.
  2. Melt chocolate fully before adding cornflour-Any unmelted chocolate pieces will make the pudding grainy. Stir till the mixture is completely smooth.
  3. Add slurry slowly while whisking – Pour the slurry in a thin stream and whisk continuously—this keeps the pudding silky and prevents thick clumps.
  4. Cook only till it coats the spoon- Overcooking tightens the starch and creates a rubbery texture. Turn off heat as soon as it thickens enough to coat the back of a spoon.
  5. Add butter after turning off heat- Butter gives richness and shine; adding it off-heat ensures it mixes smoothly without splitting.
  6. Strain the pudding- For an ultra-smooth texture, pass the hot pudding through a sieve before pouring into cups.
  7. Tap the cups after pouring- Light tapping removes air bubbles so the pudding sets evenly.

Ingredients
  • 2 cups milk
  • 3 tbsp sugar
  • ½ cup white chocolate
  • ½ cup milk+ 2+1/2 tbsp corn flour
  • 1 tbsp butter
  • 1 tsp vanilla extract
  • For the caramel layer
  • 6tbsp sugar
Instructions
  1. Set a heavy bottomed sauce pan on low- medium heat and add milk, sugar and white chocolate.
  2. ⁠Mix it well till sugar and chocolate dissolves.
  3. ⁠Add in cornflour slurry by combining ½ cup milk and cornflour.
  4. ⁠Let it simmer till the pudding thickens and coats the back of a spoon.
  5. ⁠Turn off the heat and lastly add butter and vanilla.
  6. ⁠Pour the pudding in a ramekin/ cups and refrigerate for 3-4 hours.
  7. ⁠For the caramel layer, set a pan over low-medium heat and spread sugar evenly in it.
  8. ⁠Do not stir the sugar and let it melt till it reaches a golden amber colour.
  9. ⁠Pour the caramel over the chilled pudding and let it harden.
  10. ⁠Once done, crack the pudding and enjoy.
