EGGLESS CARAMEL PUDDING
- 2 cups milk
- 3 tbsp sugar
- ½ cup white chocolate
- ½ cup milk+ 2+1/2 tbsp corn flour
- 1 tbsp butter
- 1 tsp vanilla extract
- For the caramel layer
- 6tbsp sugar
- Set a heavy bottomed sauce pan on low- medium heat and add milk, sugar and white chocolate.
- Mix it well till sugar and chocolate dissolves.
- Add in cornflour slurry by combining ½ cup milk and cornflour.
- Let it simmer till the pudding thickens and coats the back of a spoon.
- Turn off the heat and lastly add butter and vanilla.
- Pour the pudding in a ramekin/ cups and refrigerate for 3-4 hours.
- For the caramel layer, set a pan over low-medium heat and spread sugar evenly in it.
- Do not stir the sugar and let it melt till it reaches a golden amber colour.
- Pour the caramel over the chilled pudding and let it harden.
- Once done, crack the pudding and enjoy.
