EGGLESS CARAMEL PUDDING
 
 
Ingredients
  • 2 cups milk
  • 3 tbsp sugar
  • ½ cup white chocolate
  • ½ cup milk+ 2+1/2 tbsp corn flour
  • 1 tbsp butter
  • 1 tsp vanilla extract
  • For the caramel layer
  • 6tbsp sugar
Instructions
  1. Set a heavy bottomed sauce pan on low- medium heat and add milk, sugar and white chocolate.
  2. ⁠Mix it well till sugar and chocolate dissolves.
  3. ⁠Add in cornflour slurry by combining ½ cup milk and cornflour.
  4. ⁠Let it simmer till the pudding thickens and coats the back of a spoon.
  5. ⁠Turn off the heat and lastly add butter and vanilla.
  6. ⁠Pour the pudding in a ramekin/ cups and refrigerate for 3-4 hours.
  7. ⁠For the caramel layer, set a pan over low-medium heat and spread sugar evenly in it.
  8. ⁠Do not stir the sugar and let it melt till it reaches a golden amber colour.
  9. ⁠Pour the caramel over the chilled pudding and let it harden.
  10. ⁠Once done, crack the pudding and enjoy.
