INGREDIENTS USED IN AMARANTH CHOCOLATE BITES
-
AMARANTH
Roasted amaranth is the key ingredient that gives these chocolate bites their light, crisp and crunchy texture. Roasting enhances its natural nutty flavour, making it a delicious contrast to the richness of the chocolate. It also adds a little texture and structure to every bite while contributing plant-based protein, dietary fibre and essential minerals. Make sure the amaranth is roasted evenly and has cooled completely before mixing it with the melted chocolate to maintain its crunch.
-
COMPOUND CHOCOLATE
Chocolate provides the main flavour of these bites, giving them a rich, smooth and indulgent taste. More importantly, it acts as the binding ingredient that holds the roasted amaranth together. When the melted chocolate is mixed thoroughly with the amaranth, it coats the grains and helps distribute them evenly throughout the mixture. As the chocolate cools and solidifies, it creates a firm structure that allows the bites to hold their shape after demoulding. The type of chocolate you use will also influence the sweetness, richness and final texture of the bites.
