It’s not that overly sweet, frosting-loaded cake. It’s the cake you cut into on a rainy afternoon, with a hot cup of coffee in hand, and everything just slows down for a bit.
I have always thought coffee and walnut are soulmates. The deep, slightly bitter notes of coffee and the earthy, buttery crunch of toasted walnuts they just get each other. One bite is soft, aromatic, a little nutty, and incredibly cozy.
This version is my go-to eggless one. No fuss, no butter, no electric beater needed. I use milk and a little vinegar to make the crumb unbelievably soft, sunflower oil to keep it moist for days, and a good spoonful of coffee powder that makes the whole kitchen smell like a cafe.
It’s not just a cake, it’s that bakery-style slice we all crave from the coffee shop, but made right at home. Perfect for when friends drop by, for your evening tea ritual, or for those days when you just need a quiet moment to yourself.
Soft, fragrant, nutty, and so very chic, this is the kind of cake that never goes out of style.

INGREDIENTS USED IN COFFEE WALNUT CAKE
Flour
Flour is the base of the cake. It gives structure and holds everything together. It forms a light gluten network that traps air, helping the cake rise tall, stay soft, and slice neatly without crumbling.
Milk
Milk adds moisture, softness, and richness. It brings the batter together and when mixed with vinegar, it becomes instant buttermilk. This makes the crumb extra tender, fluffy, and melt-in-the-mouth.
Vinegar
Vinegar is the secret to a perfect eggless sponge. It curdles the milk into buttermilk and reacts with baking soda to create air bubbles. This makes the cake light and airy without eggs, and you won’t taste it at all in the end.
Sugar
Sugar does more than sweeten. It keeps the cake moist for longer, gives a soft crumb, and helps with that golden top. Its sweetness perfectly balances the bitterness of coffee and the earthiness of walnuts.
Sunflower Oil
Sunflower oil keeps the cake moist for days. Unlike butter, it stays liquid even when cold, so the cake never goes dry. It has a neutral taste, so the coffee flavor shines through, and it makes the batter silky smooth.
Baking Powder
Baking powder is the gentle leavener that helps the cake rise. It works twice — once when mixed and again in the oven — creating tiny air pockets that make the cake fluffy and light instead of dense.
Baking Soda
Baking soda is the stronger leavener that needs acid from vinegar to work. It gives a quick lift, makes the crumb open and airy, and deepens the colour of the cake to a rich, beautiful brown.
Coffee Powder
Coffee is the hero of this cake. It brings a warm, roasted aroma and a sophisticated bittersweet flavour. It balances the sweetness and makes the whole cake taste more deep, rich, and cafe-style.
Walnuts
Walnuts are the perfect partner to coffee. They add a nutty crunch and a toasty aroma that cuts through the softness of the cake. A few inside and a few on top give both texture and that classic bakery look.
Chocolate
Chocolate is the final chic touch. A drizzle or some shavings on top adds a little extra sweetness, a glossy finish, and makes the cake look straight out of a patisserie.
