If your social media feed has been taken over by the wildest culinary magic trick of the year, you’ve probably seen it: rich, velvety, decadent 2 ingredient cauliflower fudge made using… a whole head of cauliflower.
It sounds like a cruel kitchen prank or an unhinged wellness experiment, but science and sensory reality prove otherwise. When cooked, pureed, and paired with high-quality dark chocolate, cauliflower completely loses its earthy, cruciferous identity. Instead, its naturally high water content and soft cellular structure melt down into an ultra-smooth emulsion that mimics heavy cream or condensed milk. The result? A luxurious, melt-in-your-mouth chocolate fudge that requires just two main ingredients, zero added sugar, and takes minutes to pull together.

-
CAULIFLOWER
Cauliflower serves as the structural bulk and moisture vehicle. Cauliflower has a high water content and a neutral, mild flavor profile when cooked. When boiled or steamed and aggressively blended, its cell walls rupture, releasing water and natural starches that emulsify with the cocoa butter in the chocolate, creating a rich emulsion without needing heavy dairy.
-
DARK CHOCOLATE
The absolute flavor and structure anchor. Dark chocolate provides the intense cocoa flavor, bitterness, and—most importantly—cocoa butter. As the mixture cools down, the cocoa butter solidifies, transforming the loose vegetable puree into a firm, sliceable fudge.

TIPS TO MAKE 2 INGREDIENT CAULIFLOWER FUDGE
- Chop Chocolate Finely: Chop your dark chocolate into small, uniform pieces so the residual heat of the hot cauliflower can melt it evenly without requiring extra heat sources.
- Use Quality Dark Chocolate: Because the recipe relies entirely on chocolate for its core flavor, choose a bar you actually love eating on its own. Avoid overly waxy baking chips if possible.
- Dry Your Cauliflower Well: This is the make-or-break step. If your steamed cauliflower is dripping with water, your fudge will turn out soupy and won’t set in the fridge. Drain it completely and shake off excess moisture.
- Let It Chill Fully: Resist the temptation to eat it straight out of the blender (though it makes a great warm mousse!). Giving it a proper 3-hour chill in the refrigerator allows the fats in the dark chocolate to recrystallize, giving you that true “fudge” bite.
- 360g cauliflower florets
- 1 cup dark chocolate, chopped (175g)
- Cocoa powder, for dusting
- Wash 360 grams of cauliflower and chop it into even, bite-sized florets. Steam or boil the florets until they are completely tender and fork-pierces them with zero resistance.
- Drain the cooked cauliflower thoroughly. Press out as much excess moisture as possible using a clean kitchen towel.
- While the cauliflower is still hot, transfer it directly into your blender or food processor. Add the 1 cup of chopped dark chocolate right on top. Let it sit undisturbed for 1–2 minutes so the residual steam and heat from the cauliflower begin melting the chocolate.
- Blend on high speed until completely smooth. Stop to scrape down the sides as needed. The heat from the veggies will melt all the chocolate, and the blending process will whip the mixture into a glossy, thick mousse texture.
- Pour the mixture into a dish, smoothing the top. Pop it into the refrigerator for at least 2 to 3 hours until it firms up into a sliceable fudge consistency.
- Once set, generously dust the top with cocoa powder. Serve chilled!
