FLAN

This classic flan is one of those desserts that looks beautifully simple but delivers the most luxurious texture. It has a delicate layer of golden caramel on top, followed by a rich, creamy and silky custard that practically melts in your mouth. The combination of milk, fresh cream and condensed milk gives the flan a beautifully smooth and indulgent texture, while the vanilla adds a warm, fragrant flavour that complements the caramel perfectly.

What makes this flan especially special is the contrast between the slightly bitter, deep caramel and the sweet, creamy custard. As the flan chills overnight, the caramel slowly melts into a luscious sauce, which coats the custard beautifully when it is unmoulded. The result is a dessert that is rich without being overly heavy, with just the right amount of sweetness.

The key to achieving that signature smooth texture is to treat the custard gently. Whisk the eggs and dairy just until combined rather than creating too much foam, and always strain the mixture before pouring it into the mould. Baking it slowly in a water bath keeps the temperature gentle and even, helping the flan cook gradually without becoming rubbery or developing too many bubbles.

Don’t worry if the centre still has a slight jiggle when you take it out of the oven—that is exactly what you want. The flan will continue to set as it cools and chills. Refrigerating it overnight not only gives it time to develop its texture and flavour but also makes unmoulding much easier.

When you’re ready to serve, run a thin knife gently around the edges and invert the flan onto a serving plate in one confident motion. The caramel will flow over the sides, creating that beautiful glossy finish. Serve it chilled and let the creamy custard and caramel speak for themselves.

INGREDIENTS USED IN MAKING FLAN

  • SUGAR

Sugar is a fundamental ingredient in flan . It is used to create the caramel sauce that coats the bottom of the pudding moulds or dish. The sugar is melted and caramelized, providing a rich, bittersweet layer that complements the creamy custard.

  • MILK

Milk forms an important part of the custard base and gives the flan its smooth, soft and delicate texture. It provides the liquid needed to create a creamy custard while keeping the final dessert light enough to have that characteristic melt-in-the-mouth consistency. Milk also allows the flavours of vanilla and caramel to come through beautifully without overpowering them. Full-fat milk works particularly well when you want a richer and creamier finish.

• FRESH CREAM

Fresh cream adds richness and body to the custard, giving the flan its luxurious and velvety texture. It makes the custard feel smoother and more indulgent while complementing the milk beautifully. The cream also helps create that rich mouthfeel that makes a classic flan so satisfying. Together with the milk and eggs, it produces a custard that is creamy without being overly dense.

• CONDENSED MILK

Condensed milk provides sweetness and richness to the flan while also contributing to its creamy texture. It gives the custard a smooth and indulgent consistency and adds a subtle milky caramel-like flavour that works beautifully with the caramel topping. Since condensed milk is already sweetened, it also helps create the perfect balance between the rich custard and the slightly bitter caramel.

• EGGS

Eggs are what give the flan its structure and allow the liquid custard mixture to set during baking. They are essential for creating the soft, delicate texture that makes flan different from other creamy desserts. When baked gently in a water bath, the eggs set gradually, resulting in a smooth custard rather than a firm or rubbery one. Whisking the eggs gently and straining the mixture before baking also helps achieve a cleaner, silkier texture with fewer air bubbles.

• VANILLA EXTRACT

Vanilla extract adds warmth, aroma and depth to the custard. Although used in a small quantity, it makes a noticeable difference by enhancing the natural richness of the milk, cream and eggs. Its warm, fragrant flavour pairs especially well with the caramel, helping tie the entire dessert together. The vanilla also gives the flan a classic bakery-style aroma and a more rounded flavour.

Measuring Cups and Measuring Spoons are the first thing that anybody who in cooking or baking needs. The right quantities will help in the desired outcome so these two things are a must.

Whisks and spatulas are always useful while baking.

You also need a few mixing bowls to combine the  flan mixture & a 7inch baking mould  to set the flan in.

TIPS TO MAKE FLAN

  1. Don’t overcook the caramel: Cook the sugar until it reaches a deep golden-amber colour, but remove it from the heat before it becomes dark brown. Overcooked caramel can taste bitter.
  2. Work quickly with the caramel: Caramel sets very fast once it starts cooling. Pour it into the mould immediately and carefully swirl the mould to coat the base evenly.
  3. Avoid over-whisking the eggs: Whisk the flan mixture gently just until combined. Excessive whisking creates air bubbles, which can leave tiny holes in the finished flan.
  4. Strain the mixture: Always pass the custard through a fine-mesh sieve. This helps remove any pieces of egg and gives the flan a much smoother, silkier texture.
  5. Pour gently: Pour the flan mixture slowly over the caramel to avoid creating bubbles or disturbing the caramel layer.
  6. Always use a water bath: The water bath provides gentle, even heat and prevents the eggs from cooking too quickly. This is essential for achieving a creamy, smooth texture.
  7. Keep the mould covered: Covering the mould with aluminium foil helps prevent the surface from drying out and protects the custard from direct heat.
  8. Don’t wait for the centre to become completely firm: The flan continues to set as it cools. Overbaking can result in a rubbery or grainy texture instead of a creamy one.
  9. Cool completely before refrigerating: Allow the flan to cool down after baking before transferring it to the refrigerator.
  10. Chill overnight: Refrigerating the flan overnight gives it enough time to fully set and allows the caramel to turn into a beautiful sauce around the custard.
  11. Unmould carefully: If the caramel feels stuck, dip the bottom of the mould in warm water for a few seconds or gently warm the sides. Then run a thin knife around the edges and invert it onto a plate in one confident movement.
  12. For the smoothest finish: Keep the entire process gentle—from whisking and straining to pouring and baking. The less air you incorporate, the smoother and more delicate your flan will be.

Ingredients
  • • 1 cup sugar
  • • 2 cups milk
  • • 2 cups fresh cream
  • • ½ cup condensed milk
  • • 8 eggs
  • • 1 tbsp vanilla extract
Instructions
  1. Add the sugar to a pan and spread it into an even layer. Cook over medium heat without stirring until the sugar melts and turns a golden amber colour.
  2. Immediately pour the caramel into a 7-inch baking mould, carefully tilting the mould to spread the caramel evenly across the base. Set aside.
  3. In a large bowl, add the milk, fresh cream, condensed milk, eggs and vanilla extract.
  4. Whisk gently until all the ingredients are well combined.
  5. Strain the mixture through a fine-mesh sieve to remove any lumps and ensure a smooth, silky flan.
  6. Pour the strained flan mixture gently over the set caramel.
  7. Cover the mould tightly with aluminium foil.Place the mould in a larger baking tray and pour in enough hot water to create a water bath, reaching about halfway up the sides of the flan mould.
  8. ⁠Bake at 160°C for approximately 2½ hours, or until the edges are set while the centre still has a gentle jiggle.
  9. Refrigerate overnight and serve chilled.
