This Mango Gond Katira Chia Pudding has quickly become one of my absolute favourite summer recipes. It’s creamy, refreshing, naturally sweet, and has the most satisfying chilled texture that makes every spoonful feel cooling and comforting on a hot day. The sweetness of ripe mangoes blended with milk creates a rich tropical base, while chia seeds thicken it into a soft pudding-like consistency. What makes this recipe truly special though is the addition of gond katira — once soaked, it turns beautifully soft and jelly-like, adding a naturally cooling element that has been traditionally enjoyed during Indian summers for years.
I love making this when I’m craving something sweet that still feels wholesome and nourishing. It tastes indulgent like a dessert, but is packed with ingredients that keep you full and refreshed at the same time. The combination of juicy mangoes, creamy pudding, and chilled gond katira creates such a unique texture and flavour contrast that every bite feels deliciously satisfying. It’s one of those recipes that looks fancy, tastes luxurious, but comes together with minimal effort.
Another reason I keep going back to this recipe is how versatile it is. You can enjoy it as a quick breakfast, a post-lunch dessert, a healthy evening snack, or even serve it in pretty glasses for guests during summer gatherings. The best part is that there’s no cooking involved — just blend, mix, refrigerate, and let the chia seeds work their magic. Once chilled, the pudding becomes thick, creamy, and incredibly refreshing.
Topped with extra mango chunks and more soaked gond katira, this pudding feels like the perfect balance of health and indulgence. If you enjoy fruity desserts that are light, hydrating, and perfect for warm weather, this is definitely a recipe worth trying and saving for the entire mango season.

Since gond katira is traditionally known for its cooling properties, it pairs especially well with ingredients like mango, milk, and chia seeds in chilled summer desserts. Along with texture, it also gives the pudding a light, delicate feel without affecting the flavour too much, allowing the mango to remain the star of the recipe.
MILK
Milk adds creaminess, enhancing the richness and mouthfeel of the pudding, while also serving as a nutritional boost, providing protein, calcium, and other essential nutrients. Additionally, milk acts as a binding agent, ensuring that the chia seeds absorb the liquid evenly and thicken the pudding properly. Honey can be used in mango chia pudding as a natural sweetener to enhance the overall flavor profile. It adds a touch of sweetness that complements the flavour of mango without overpowering.
