FLOUR

Flour absorbs liquid and fat during mixing and frying, ensuring the donut cooks evenly and doesn’t become greasy. Flour acts as a neutral base, allowing the rich chocolate glaze, Nutella ganache filling, and hazelnut crunch to stand out without overwhelming sweetness.

SUGAR

Sugar is essential in Ferrero Rocher donuts because it provides sweetness, enhances flavor, contributes to the golden-brown crust, and balances the rich hazelnut and chocolate elements. Without sugar, the donuts would taste flat, lack caramelization, and lose their indulgent appeal. During frying or baking, sugar undergoes the Maillard reaction, giving donuts their golden-brown exterior and subtle caramel undertones. Sugar attracts and holds water, keeping donuts soft and preventing them from drying out. Sugar also feeds the yeast, helping the dough rise and develop airiness.

TIPS TO KEEP IN MIND WHILE MAKING FERRERO ROCHER DONUTS

  1. Use room-temperature ingredients. Ensure your eggs and butter are at room temperature to help the dough mix evenly.
  2. Use warm water in the dough. This helps hydrate the yeast and flour better.
  3. Knead the dough until it is smooth and elastic. This develops the gluten, giving the donuts their structure.
  4. Let the dough rise in a warm place until it doubles in size. Overproofing can lead to dense donuts, while underproofing will make them tough.
  5. Fry at 170–180°C (340–350°F). Too hot, and the donuts will burn outside while staying raw inside; too cool, and they will absorb excess oil.
  6. Fry in small batches. Overcrowding the fryer can lower the oil temperature, affecting the texture.
  7. Cool before filling. Let the donuts cool slightly after frying to avoid melting the filling and glaze.
  8. Use a piping bag. Fill the donuts neatly with a piping bag to ensure even distribution of the Nutella chocolate ganache.

FERRERO ROCHER DONUTS

Ingredients
  • 3 cups flour
  • ¼ cup castor sugar
  • 4 tsp yeast
  • 4 eggs
  • ¼ cup warm water
  • 4 tbsp (55g) butter, softened
  • Oil, for frying
  • For the Nutella chocolate ganache
  • ½ cup dark chocolate
  • ½ cup fresh cream
  • ½ cup Nutella
  • For the glaze
  • 1 cup milk chocolate, melted
  • 1 tbsp sunflower oil
  • ¼ cup hazelnuts, finely chopped
Instructions
  1. To make the dough, mix flour, castor sugar and yeast in a bowl.
  2. Add the eggs next and knead them into a smooth dough. This will take around 10-15 mins.
  3. Once the dough is smooth and passes the window pane test, add the butter and knead until it has been absorbed. Put the dough in a greased bowl and cover it with a wet kitchen towel and rest the dough for 1 hour, or until it doubles up in size.
  4. Punch down the dough and make equal-sized portions of the dough (60g each) and roll them to make perfect dough balls. Allow them to proof for another 30-40 minutes, or until it doubles up in size.
  5. ⁠Once proofed, fry the donuts in hot oil until they are golden on both the sides. Let them cool down completely.
  6. To make the Nutella ganache, melt the chocolate and cream together in the microwave in 30 second intervals. Once completely melted, add in the Nutella and mix well. Fill the ganache in a piping bag and fill the donuts once they are cool.
  7. For the glaze, melt the milk chocolate in a microwave in 30 second intervals until completely melted. Add in the oil and chopped hazelnuts. Mix well.
  8. Coat the donuts filled with the Nutella ganache halfway through with the glaze. Let the glaze harden slightly and enjoy.
