Inspired by the classic Italian dessert Tiramisu, it takes everything we love about traditional tiramisu—the softness of coffee-soaked biscuits, the richness of a creamy mascarpone layer, and that final dusting of cocoa—and transforms it into a perfectly portioned, easy-to-carry version.

What makes this version so special is not just its convenience, but the experience it creates. It feels like a little escape in the middle of a busy day, whether you’re packing it for work, enjoying it as a post-lunch treat, or even sneaking a few bites straight from the fridge late at night. There’s no slicing, no serving—just open the lid and dive in. Each layer comes together in a way that’s both familiar and comforting, yet playful in its presentation.

INGREDIENTS USED IN MAKING LUNCHBOX TIRAMISU

  • STORE BOUGHT LADY FINGER BISCUITS

Store-bought ladyfinger biscuits form the structural base of tiramisu. Their light, airy texture allows them to absorb the coffee soak beautifully without completely collapsing, creating those signature soft yet defined layers. They act as a sponge, carrying flavour while maintaining enough structure to give the dessert its layered form. Using store-bought versions also ensures consistency and convenience, making the process quicker without compromising on the classic texture.

  • COFFEE SOAK

The coffee soak is a mixture of water and coffee powder that is used to soak the ladyfingers. The coffee soak is what gives tiramisu its unmistakable depth and character. Typically made with strong brewed coffee, it infuses the biscuits with a rich, slightly bitter flavour that balances the sweetness of the cream. The key lies in soaking just enough—so the biscuits are moist and flavourful without becoming overly soggy. This layer is what ties the entire dessert together, both in flavour and moisture.

  • MASCARPONE CHEESE

Mascarpone cheese is the heart of tiramisu’s creamy layer. Its smooth, rich, and slightly sweet profile creates that luxurious mouthfeel the dessert is known for. Unlike sharper cheeses, mascarpone is mild and velvety, allowing it to blend seamlessly with other ingredients while adding body and indulgence. It provides the signature richness that defines tiramisu.

  • WHIPPED CREAM

Whipped cream is folded into the mascarpone to lighten the mixture and create a soft, airy texture. It prevents the cream layer from feeling too dense or heavy, making each bite feel smooth and delicate. The whipped cream also adds volume, helping achieve those thick, luscious layers while keeping the dessert balanced.

  • ICING

    SUGAR

Icing sugar (powdered sugar) sweetens the cream layer while maintaining a smooth consistency. Because it dissolves easily, it blends seamlessly into the mascarpone and whipped cream without leaving any graininess. It adds a gentle sweetness that complements the bitterness of the coffee rather than overpowering it.

  • COFFEE LIQUER

Finally, coffee liqueur adds an extra layer of sophistication and depth to the dessert. It enhances the coffee flavour while introducing subtle notes of warmth and complexity. Used in moderation, it elevates the overall taste, making the tiramisu feel more rounded and indulgent without being overwhelming.

 

EQUIPMENTS USED IN MAKING LUNCHBOX TIRAMISU

The kind of equipment you use when you’re baking makes a huge difference to the end result!

Not a single day goes in my kitchen when I don’t use a Silicon Spatula, this is the one I recommend. Same goes for my set of Measuring Cups and Measuring Spoons.

I used a steel tiffin to assemble my tiramisu. You will also need a piping bag for uniformity while filling the mascarpone layer.

TIPS TO MAKE LUNCHBOX TIRAMISU

  1. Don’t soak the ladyfingers for too long in the coffee mixture. A quick dip is all they need to absorb the flavor without becoming too soggy.
  2. Take your time when layering the ingredients. Evenly spread each layer of mascarpone filling and ladyfingers to create a balanced dessert with consistent flavors and textures.
  3. Allow your tiramisu to chill in the refrigerator for at least a few hours, preferably overnight. This allows the flavors to meld together and the dessert to set properly, resulting in a deliciously creamy texture.
  4. Just before serving, dust the top of your tiramisu with cocoa powder using a fine mesh sieve. This adds a touch of bitterness and enhances the visual appeal of the dessert.

Ingredients
  • For the soak
  • 1+ ½ cup water
  • 2 tbsp instant coffee powder
  • 2 shots coffee liquer
  • For the mascarpone filling
  • ½ cup mascarpone cheese
  • ¾ cup whipped cream
  • ¼ cup icing sugar
  • ½ tsp vanilla extract
  • 16-17 lady finger biscuits
  • Cocoa powder, for dusting
Instructions
  1. For the coffee soak, in a bowl add in water, coffee liquer and coffee powder. Mix this really well and set it aside.
  2. For the mascarpone filling, in a bowl, add mascarpone cheese,whipped cream, vanilla and icing sugar. Combine everything really well until no lumps remain.
  3. For the assembly- take a lunchbox. Start by soaking store bought lady fingers in coffee soak and place them on the base of the dish in a single layer. Pipe a generous layer of mascarpone filling over these soaked ladyfingers and spread it evenly. Repeat the process one more time.
  4. Dust cocoa powder and cover the top entirely. Refrigerate the tiramisu for 6-8 hrs or overnight and serve!
