I love making ice cream, especially in the summer. This year, I wanted to try something different and healthier. So, I decided to make chocolate ice cream without using any sugar. You might be thinking, “Can ice cream without sugar still taste good?” Well, I promise you won’t even notice the difference. It’s still super tasty! INGREDIENT USED IN MAKING CHOCOLATE ICECREAM
DATES
Dates are a natural sweetener derived from the fruit of the date palm tree. They are rich in natural sugars, primarily fructose and glucose, which provide sweetness to the ice cream without the need for refined sugar. Dates also add a depth of flavor and a hint of caramel-like taste to the ice cream.
Before using make sure you de-seed the dates. It’s essential to soak them in warm water for 15-20 minutes, or until they become soft and mushy. This step is crucial and cannot be skipped, as it ensures that the dates blend properly with all the other ingredients..
FRESH CREAM
Fresh cream adds richness and creaminess to the ice cream, giving it a smooth and luxurious texture. When incorporated into the ice cream mixture, fresh cream adds a smooth and creamy mouthfeel, enhancing the overall texture of the dessert. Fresh cream helps emulsify the ingredients in the ice cream mixture. This ensures that the ice cream freezes evenly and prevents the formation of ice crystals, resulting in a smooth and creamy texture. I use Amul’s Fresh Cream for all my recipes.
MILK
Milk is a staple ingredient in ice cream that contributes to its liquid base. It adds moisture and helps create a creamy texture when combined with fresh cream. Milk also contains proteins and sugars, which contribute to the overall flavor and texture of the ice cream. Additionally, milk provides a source of calcium and other nutrients. I used Nestle milk for this recipe
COCOA POWDER
It is the primary ingredient responsible for the rich chocolate flavor in chocolate ice cream. Cocoa powder is also low in fat and sugar, making it a healthier alternative to chocolate syrup or other chocolate flavorings. Cocoa powder imparts a deep, bittersweet taste and contribute to the dark color of the ice cream.
EQUIPMENT USED FOR MAKING CHOCOLATE ICE CREAM
A few kitchen staples that should always be there in the kitchen are mentioned below.
Measuring Cups and Measuring Spoons are the first thing that anybody who in cooking or baking needs. The right quantities will help in the desired outcome so these two things are a must.
A mixer grinder jar to blend everything together.
Ice tray or silicone tray is required to freeze the ice cream mixture.
TIPS TO KEEP IN MIND WHILE MAKING CHOCOLATE ICE CREAM
- As mentioned earlier, soak the de-seeded dates in warm water for 15-20 minutes before using them in the recipe. This helps soften them and ensures they blend smoothly with the other ingredients.
- Choose a high-quality cocoa powder for rich and intense chocolate flavor. I use Van houten or Hershey’s cocoa powder in my kitchen.
- Blend the soaked dates, cocoa powder, fresh cream, and milk until smooth and creamy. Ensure there are no lumps or chunks remaining for a silky-smooth ice cream base.
- Let the ice cream freeze for 8 hours minimum before churning it again in mixer grinder.

- 10 dates, deseeded
- 1+1/2 cup fresh cream
- 1+1/2 cup milk
- 4 tbsp cocoa powder
- Start by soaking 10 deseeded dates in warm water for 15-20 minutes or until soft and mushy.
- Begin by placing soaked dates, cocoa powder, milk, and cream into a mixer grinder jar.
- Blend the ingredients until a smooth batter forms, ensuring the mixture is thoroughly combined.
- Transfer the blended mixture into a silicone mould/ice cube tray and freeze it for 8 hours or until its completely frozen.
- Once completely frozen remove the solidified mixture from the mould and place these cubes into a mixer grinder and pulse them until a creamy ice cream consistency is achieved.
