If you love gulab jamun but don’t love the deep-frying and the long process, this recipe is going to be your new favourite. I combined two of my pantry staples, humble suji and instant gulab jamun premix, to create these super soft, golden, bite-sized pista cakes, and instead of frying, we are making them in a paniyaram pan! Think of it as a fusion between suji cake, appam and gulab jamun. The outside turns beautifully crisp and golden because of the ghee, while the inside stays pillowy and moist. Soaked in a light, not-too-sweet saffron and cardamom syrup, every bite literally melts in your mouth.

INGREDIENTS USED IN MINI PISTA CAKES
-
Suji
This is our hero ingredient. I use fine suji, not mota wala. It gives the balls that beautiful grainy yet soft texture and holds the shape in the paniyaram pan without needing maida. It also makes them light.
-
Castor Sugar
We are using castor sugar instead of regular powdered sugar because it dissolves instantly in the batter. It sweetens the balls from inside, so even before the syrup soak, they are delicious. Don’t reduce it too much, otherwise they will taste flat.
-
Ghee
Ghee is non-negotiable here! It adds that rich, nutty aroma that makes it taste like authentic mithai. It also makes the balls extra moist and helps them get that perfect golden crust in the paniyaram pan. You can use melted ghee at room temperature.
-
Rose Water
Just half a tablespoon is enough to give that classic gulab jamun wala floral aroma. It lifts the whole flavour and pairs so well with cardamom. Don’t use rose essence, it will be too strong.
-
Milk
Warm milk brings everything together. Warm milk helps the suji swell faster and activates the leaveners, giving us fluffier balls. Always add it gradually – you might need a little less or more.
-
Gulab Jamun Premix
This is my shortcut secret. The premix already has milk solids, maida and a little leavening, so it instantly makes our suji balls softer, richer and gives them that authentic gulab jamun taste without khoya. Any brand like Gits or MTR works.
-
Baking Powder + Baking Soda
We need both. Baking powder makes them puff up and become light, while a pinch of baking soda gives that beautiful golden colour and extra softness in the paniyaram pan.
-
Cardamom Powder
The soul of any Indian sweet. Freshly ground elaichi adds warmth and cuts through the richness of ghee. Chopped Pistachios: Only for topping, but it adds that much-needed crunch, colour and makes them look straight out of a mithai shop.

EQUIPMENTS USED FOR MAKING MINI PISTA CAKES
This recipe needs staples and basic equipment that are easily available in kitchens or in nearby stores.

Measuring Cups and Measuring Spoons. are an integral part of any baker’s kitchen, and it’s very important to measure ingredients with precision.
A spatula and a whisk help to bring this batter together.
TIPS FOR MAKING MINI PISTA CAKES
Mix the suji batter just until combined. Rest it for 10 mins so suji swells ,this makes balls soft, not hard.
Batter should be thick idli-batter like. If too runny, add 1 tbsp more suji. If too thick, add 1-2 tbsp warm milk.
Paniyaram pan heats fast. Cook on low-medium flame and keep greasing the cavities well with ghee or your balls will stick and not brown evenly.
Soak the balls in lukewarm syrup, not boiling hot, otherwise they will break. Syrup should be light and sticky, not 1-string.

- Heat paniyaram pan, add ½ tsp ghee in each cavity. Spoon batter till ¾th full. Cover with lid and cook on low flame for 3-4 mins. Once bottom is golden, flip gently with a skewer and cook other side for 2-3 mins till evenly golden and cooked inside.
