INGREDIENTS USED IN ROSE FULJHADI STICKS

  • Butter

Butter is one of the most important ingredients in these Rose Fuljhadi Sticks, contributing to their rich flavour, delicate texture, and melt-in-the-mouth quality. Its fat coats the flour particles, limiting gluten development and helping create tender, crumbly biscuits rather than chewy ones. Butter also adds a creamy dairy flavour that complements the floral notes of rose water, the warmth of cardamom, and the sweetness of ruby chocolate. When creamed with icing sugar, it incorporates air into the mixture, helping create a lighter texture. As the biscuits bake, butter contributes to their structure, delicate crispness, and lightly golden colour.

  • Icing Sugar

Icing sugar sweetens the biscuits while helping maintain their fine, delicate texture. Unlike granulated sugar, its very fine particles blend smoothly with softened butter, creating a uniform mixture without a grainy texture. This helps produce biscuits with a tender, shortbread-like consistency. Icing sugar also contributes to the biscuits’ light colour and subtle crispness after baking. Since these sticks are coated in sweet ruby chocolate, the icing sugar provides balanced sweetness to the biscuit base without needing an overly sugary dough.

  • Rose Wate

Rose water gives these biscuits their signature floral aroma and delicate rose flavour, making them especially suitable for festive occasions like Diwali. Its fragrant notes complement the buttery biscuit base and pair beautifully with the fruity, slightly tangy flavour of ruby chocolate. Rose water also adds a distinctive Indian-inspired touch, reminiscent of traditional rose-flavoured sweets. Using the right amount is important, as too much can make the flavour overpowering or perfumey. It should enhance the other ingredients while allowing the buttery richness and cardamom to shine through.

  • All-Purpose Flour (Maida)

All-purpose flour provides the main structure of the biscuits. Its proteins form gluten when hydrated, helping the dough hold together and allowing the sticks to retain their shape during baking. Since this recipe contains butter and icing sugar, gluten development is naturally limited, resulting in a tender, crisp biscuit rather than a tough or chewy one. The flour also absorbs moisture from the rose water and butter, creating a dough that can be shaped into long, uniform sticks. Chilling the dough before shaping helps firm up the butter, making the sticks easier to handle and helping them maintain their shape in the oven.

  • Cardamom Powder

Cardamom powder adds a gentle warmth and aromatic sweetness that beautifully complements the floral flavour of rose water. Its distinctive fragrance gives the biscuits a festive, Indian-inspired flavour profile, making them a lovely addition to Diwali dessert platters and gifting hampers. Cardamom also balances the richness of butter and the sweetness of ruby chocolate, adding depth without overpowering the delicate rose notes. A small quantity is enough to provide a fragrant finish and make these biscuits taste more distinctive.

  • Ruby Chocolate

Ruby chocolate forms the beautiful pink coating that gives these Rose Fuljhadi Sticks their festive appearance. It adds sweetness, a creamy texture, and characteristic fruity, slightly tangy notes that contrast with the rich, buttery biscuits. Once melted, it creates a smooth coating that adheres to the cooled sticks and sets into a delicate chocolate shell. Its natural pink hue makes the biscuits visually striking, while the flavour pairs particularly well with rose water and cardamom. Allowing the chocolate to set completely before storing helps preserve the coating and gives the sticks a neat, finished appearance.

EQUIPMENTS USED IN MAKING ROSE FULJHADI STICKS

Measuring Cups and Measuring Spoons are an integral part of any baker’s kitchen and it’s very important to measure ingredients with precision.

Mixing bowls and spatula are required to help to bring in the dough together. A bench scraper and parchment paper are also needed to shape the sticks.

TIPS TO KEEP IN MIND WHILE MAKING ROSE FULJHADI STICKS

  1. Measure ingredients with precision. Since dough contains only a few ingredients, even small measurement errors can affect the texture.
  2. Use room-temperature butter. Softened butter creams more easily with icing sugar, producing a smooth and uniform dough.
  3. Avoid overmixing the dough. Mix the dough only until the ingredients are combined. Excessive mixing develops more gluten, which can make the biscuit tough instead of light and crisp.
  4. Chill the dough before shaping. If the dough feels soft or sticky, chill it for 20–30 minutes. Chilled dough is easier to roll thinly, holds its shape better, and reduces the risk of stretching or tearing while cutting.
  5. Cut uniform strips. Using a sharp knife, pizza cutter, or pastry wheel helps create straight biscuit sticks of equal width.
  6. Keep space between the sticks while baking. Arrange the biscuit sticks with a small gap between them on the baking tray. Proper spacing allows heat to circulate evenly and prevents the sticks from sticking together as they bake.
  7. Do not overbake. Because sticks are thin, they bake quickly. Bake until the edges are lightly golden while the centers remain pale golden.
  8. Cool the biscuits completely. Never dip warm biscuit sticks into melted chocolate. Heat from the biscuits can cause the chocolate to become runny, resulting in an uneven coating. Cooling also allows the biscuits to become fully crisp.
  9. Dip each biscuit stick smoothly while leaving a small portion uncoated to create the traditional handle. Rotate the stick gently as you lift it from the chocolate to ensure an even coating and minimize drips.
  10. Allow the chocolate to set completely. Place the coated sticks on baking paper or a wire rack and let the chocolate harden completely before moving or packaging them. This prevents fingerprints, smudges, and damaged coatings.
  11. Store the finished sticks in an airtight container away from direct sunlight and moisture to maintain their crisp texture and glossy chocolate finish.
