TIPS TO KEEP IN MIND WHILE MAKING EGGLESS COFFEE BEAN COOKIES
- Chill the Dough Before Shaping. 15–20 minutes of chilling helps firm up the dough, making it easier to roll and carve the signature coffee bean line without losing shape.
- Freeze the shaped cookies again for 4-5 hours so that the cookies don’t spread while baking.
- Keep Sizes Uniform. This ensures all cookies cook evenly, especially important when not using an oven
- Use instant coffee powder. Instant coffee is particularly convenient because it dissolves easily in hot water. It also gives the cookies a concentrated coffee flavour without introducing coffee grounds into the dough.
- Don’t overmix. Once the flour is incorporated, mix only until the dough comes together. Excessive mixing can develop gluten and result in a firmer cookie.
- Make the centre groove after shaping. Trying to create the groove before forming the oval can distort the shape. Shape the cookie first, then make the central indentation.
- Don’t press the groove too deeply. The line should look like the natural split in a coffee bean. A shallow, neat indentation gives a much better result than cutting deeply through the cookie.
- Watch the baking time. The cookies are already naturally dark because of the cocoa and coffee, so you may not see a dramatic colour change during baking.
- Let them cool completely. The texture continues to develop as the cookies cool. Moving them around immediately after baking can cause them to break.
- 2 tbsp hot water
- ½ tbsp instant coffee
- 6 tbsp (85g) melted butter
- 6 tbsp icing sugar
- ½ cup + 3 tbsp all purpose flour
- 1 tbsp cocoa powder
- ½ tbsp cornflour
- In a bowl, add the hot water and coffee. Mix well and keep it aside.
- Take butter and sugar in a bowl and whisk this together until well combined.
- Add in flour, cocoa powder, cornflour, coffee mixture and combine everything together to form a smooth cookie dough.
- Refrigerate the dough for 30-45 minutes.
- Once chilled, divide the dough into equal portions using 1 tbsp measurement and give them an oval shape.
- Place the shaped cookies on the paper liner and make a gentle cut in the middle using a sharp knife.
- Freeze them for another 4-5 hours to prevent the cookies from spreading.
- Place them in the air fryer and bake at 170 degrees Celcius for 12 minutes or until the edges become crisp.
