TIPS TO KEEP IN MIND WHILE MAKING BISCOFF KALAKAND

  1. Use fresh paneer: Fresh, soft paneer gives the kalakand a creamy texture. If using store-bought paneer, soak it in warm water for 10–15 minutes, drain well, and crumble before using.
  2. Cook on low to medium heat: Slow cooking allows the moisture to evaporate gradually without burning the milk solids or caramelizing the sugars too quickly.
  3. Crumble the paneer finely: Smaller crumbs blend more evenly with the condensed milk and milk powder, giving the kalakand its signature melt-in-the-mouth texture.
  4. Stir continuously: Condensed milk and Biscoff spread contain sugar that can stick to the bottom of the pan. Regular stirring prevents scorching and ensures even cooking.
  5. Don’t overcook the mixture: Cook only until the mixture leaves the sides of the pan and holds its shape. Overcooking can make the kalakand dry and crumbly instead of soft and fudgy.
  6. Add the Biscoff spread towards the end: Mixing it in after the paneer mixture has cooled helps preserve its distinctive caramelized biscuit flavour.
  7. Press gently, not firmly: Lightly smooth the surface with a spatula. Pressing too hard can make the texture dense.
  8. Garnish just before serving or after the mixture has cooled slightly: Crushed Biscoff cookies stay crisp for longer if added after the surface is no longer hot.
  9. Allow sufficient setting time: Let the kalakand cool completely and refrigerate for at least 2–3 hours before slicing. This helps it firm up and gives clean, neat squares.
  10. Use a sharp knife for cutting: Wipe the knife clean between cuts for professional-looking pieces.
  11. Store properly: Keep the kalakand refrigerated in an airtight container for up to 4–5 days. Since it contains fresh paneer, avoid leaving it at room temperature for extended periods.

Ingredients
  • 6 tbsp milk powder
  • 2 cups condensed milk
  • 1 kg paneer
  • ½ cup Biscoff spread
  • Biscoff cookies to garnish
  • 2-3 tbsp chopped pistachios to garnish
Instructions
  1. In a pan, add the milk powder and condensed milk. Mix it well and place the pan on medium heat.
  2. Add in the grated paneer. Mix well to combine everything together while pressing down the paneer with a spatula to break it down further.
  3. Once the mixture looks well incorporated and cooked, remove it into 2 bowls.
  4. To one bowl, add in the Biscoff spread and mix well.
  5. Now, transfer the Biscoff kalakand to a lined mould and flatten it out. Spread a layer of the plain kalakand over it.
  6. Let this cool in the fridge for an hour so that it sets well.
  7. Once set, sprinkle crushed Biscoff cookies and the chopped pistachios over it.
  8. Demould and cut into equal sized squares. Serve chilled and enjoy.
