INGREDIENTS USED IN CHOCOLATE COATED ALMONDS
-
Dark Chocolate
Dark chocolate is the main ingredient that brings this recipe together. When melted, it creates a smooth, rich coating around every almond and gives the final snack its deep, indulgent chocolate flavour. It also helps the cocoa powder stick evenly to the almonds, creating a beautiful velvety finish. Since dark chocolate has a slightly bittersweet taste, it balances the natural nuttiness of the almonds without making the recipe overly sweet. For the best results, use good-quality dark chocolate that melts smoothly. You can use chocolate with a higher cocoa percentage for a more intense flavour or a slightly sweeter dark chocolate if you prefer a milder taste.
-
Almonds
Almonds are the crunchy base of this recipe and add a delicious nutty flavour that pairs perfectly with dark chocolate. Their firm texture creates a satisfying crunch in every bite and provides a lovely contrast to the smooth chocolate coating. Almonds also make this snack more wholesome and filling compared with regular chocolate candies. Make sure the almonds are fresh, dry and evenly spread in the container before air frying. If they are stored in the refrigerator, allow them to come to room temperature and dry completely before using, as any moisture can affect the texture of the melted chocolate. You can use plain almonds as mentioned in the recipe or lightly roasted almonds for a deeper, toastier flavour.
-
Cocoa Powder
Cocoa powder gives the chocolate almonds their intense chocolate flavour and signature café-style appearance. Once the almonds are coated in melted chocolate, the cocoa powder creates a soft, velvety layer on the outside and adds a slightly bittersweet taste that balances the richness of the chocolate. It also helps keep the chocolate-coated almonds from sticking to one another and gives them a neat, dry finish. Use good-quality unsweetened cocoa powder for the best flavour. If you enjoy a sweeter snack, you can mix a small amount of powdered sugar with the cocoa powder before coating the almonds.
Together, these three simple ingredients create the perfect combination of rich chocolate, crunchy almonds and deep cocoa flavour. The smooth chocolate coating, nutty crunch and velvety cocoa finish make these chocolate almonds delicious enough to enjoy as a quick snack, serve with coffee, add to dessert platters or pack into small jars for gifting.

TIPS TO MAKE CHOCOLATE COATED ALMONDS
- Use good-quality dark chocolate: Since chocolate is the main flavour in this recipe, choose a good-quality dark chocolate that melts smoothly and tastes rich. Avoid using compound chocolate if you want a deeper, more premium chocolate flavour.
- Use good-quality dark chocolate: Since chocolate is the main flavour in this recipe, choose a good-quality dark chocolate that melts smoothly and tastes rich. Avoid using compound chocolate if you want a deeper, more premium chocolate flavour.
- Make sure the almonds are completely dry: Even a small amount of moisture can cause the melted chocolate to become thick or grainy. Ensure the almonds and the air-fryer-safe container are clean and completely dry before starting.
- Use fresh almonds: Fresh, crisp almonds give the best crunch and flavour. Avoid using almonds that taste stale or have become soft. You can also lightly roast the almonds beforehand for a deeper, nuttier flavour.
- Do not overheat the chocolate: Chocolate can burn quickly, especially in an air fryer. Air fry at 150°C for only 2–3 minutes, checking after 2 minutes. The chocolate may not look fully melted on top, but it will continue to soften and melt when mixed with the warm almonds.
- Mix immediately and thoroughly: As soon as you remove the container from the air fryer, stir the chocolate and almonds well. Make sure every almond is evenly coated before adding the cocoa powder.
- Add the cocoa powder while the chocolate is still warm: The cocoa powder should be added immediately after coating the almonds with chocolate. This helps it stick evenly and creates a smooth, velvety finish.
- Use a lid that fits securely: Once the cocoa powder is added, cover the container tightly before shaking. Shake gently but thoroughly so that all the almonds are coated without breaking or getting damaged.
- Avoid adding too much cocoa powder at once: Add the cocoa powder in batches if needed. This prevents thick, dry patches and helps create an even coating. If you prefer a milder chocolate flavour, you can use slightly less cocoa powder.
- Separate any clumps before the chocolate sets: After shaking, transfer the almonds to a tray or plate lined with parchment paper. Use a fork or spoon to separate any almonds that are sticking together.
- Allow the chocolate to set completely: Let the almonds cool and set fully before transferring them to an airtight container. This helps the coating become firm and prevents the almonds from sticking together during storage.
- Store them correctly: Keep the chocolate almonds in a clean, dry, airtight container. Store them in a cool place away from direct sunlight and heat. During warm weather, refrigerate them to prevent the chocolate from melting. Let them sit at room temperature for a few minutes before eating for the best texture.
