- Use Good Quality Instant Coffee or Espresso Powder
- Don’t Overmix the Dough- Once the flour is added, mix just until combined.
- Chill the Dough Before Shaping- 15–20 minutes of chilling helps firm up the dough, making it easier to roll and carve the signature coffee bean line without losing shape.
- If making in a pan or kadhai, cook on low heat to avoid burning the base. Cover with a lid to ensure even cooking inside.
- Keep Sizes Uniform- This ensures all cookies cook evenly, especially important when not using an oven.
- ¼ cup hot water
- 1 tbsp coffee powder
- ¾ cup salted butter, melted
- ¾ cup icing sugar
- 1+ ¼ cup flour
- ¼ cup cocoa powder
- 1 tbsp cornflour
- In a bowl add coffee and hot water, stir and keep it aside.
- Take butter and sugar in a bowl and whisk this together until well combined.
- Add in the coffee mixture and whisk well.
- Last add in flour, cocoa powder, cornflour and combine everything together to form a smooth cookie dough.
- Refrigerate the dough for 30-45 minutes.
- Once chilled, divide the dough into equal portions using 1 teaspoon measurement and give them an oval shape.
- Place the cookie balls on the baking tray and and make a gentle cut in the middle using a sharp knife.
- For baking, set a pan on medium-low heat and spread a layer of salt in it. Place a small stand in it and cover it for 5 minutes.
- Once preheated, place the cookie plate over the stand and cover again. Let it cook for 15-18 minutes or until the edges become crisp.
