Rabdi Seviyan cups

Festivals are made of mithai, memories, and moments that bring everyone together and our Rabdi Seviyan Cups bring all three to one plate.

We take fine roasted seviyan, crisp it to golden perfection and shape it into delicate edible cups. Each cup is then generously filled with our slow-cooked, kesar rabri which is creamy, rich, and simmered for hours till it turns into pure indulgence.

It’s the taste of Diwali nights and family gatherings, but with a modern, elegant twist. Crisp on the outside, silky and melt in the mouth inside, topped with crushed pistachios and a touch of rose.

More than just a dessert, it’s a festive mithai that looks beautiful on your celebration table, is easy to serve to guests, and makes every celebration a little more special.

INGREDIENTS USED IN RABDI SEVIYAN CUPS

Seviyan

The heart of this dessert. Fine vermicelli is used as the base to create the edible cup. When roasted, it gives a beautiful golden color, nutty aroma, and the crispy texture that holds the creamy rabri. It is the main structure of the dessert.

Ghee

Ghee is used to roast the seviyan. It adds a rich, festive aroma, prevents the seviyan from sticking, and gives that classic shiny, golden-brown color. It also makes the cups crispier and more flavorful than using oil.

Condensed Milk

Condensed milk is used here as both a sweetener and a natural binder. It replaces sugar completely. Its thick, sticky texture helps the roasted seviyan bind together perfectly to hold the cup shape without breaking. It also adds extra creaminess, a light caramel flavor, and a beautiful golden color to the cups, making them richer and more festive than plain sugar. Because it is already sweet, you don’t need any extra sugar in the base.

Full-fat milk

This is the base of the rabri. Full-fat milk is essential because its malai makes the rabri thick, creamy, and rich. Low-fat milk will not give that authentic festive richness.

 

Milk powder

This is your shortcut to richness. It thickens the rabri instantly without having to simmer milk for hours. It makes the rabdi extra creamy and adds a mawa like taste, which is perfect for a festive dessert.

Custard powder

Custard powder is the stabilizer. It thickens the rabri to a perfect filling consistency so it does not become runny inside the crispy cup. It gives that smooth, custardy, halwai style texture.

Sugar

This sweetens the rabri. It is kept less than the cup’s sugar because rabri should be mildly sweet and balanced, not overly sugary, to let the kesar and cardamom shine.

Cardamom powder

The festive fragrance. Cardamom is the soul of any Indian mithai. A small amount adds a warm, sweet aroma that cuts through the richness of the milk and makes the Rabdi smell divine.

Kesar (Saffron)

Kesar is for color, aroma, and luxury. These few strands give the rabri a beautiful golden-yellow festive color and a royal taste. It makes the dessert look premium and more appealing for Diwali.

 

EQUIPMENTS USED FOR MAKING RABDI SEVIYAN CUPS

This recipe needs staples and basic equipment that are easily available in kitchens or in nearby stores

I have used a cupcake tray mould to set the seviyan cups

Measuring cups and Measuring spoons are an integral part of any baker’s kitchen, and it’s very important to measure ingredients with precision

A spatula to mix the Rabdi.

TIPS TO MAKE RABDI SEVIYAN CUPS

  • Use thin roasted seviyan, break them with hands before roasting with ghee, it will help to hold shape better
  • Add condensed milk on low-off heat and mix until sticky, if overcooked it will become hard
  • Don’t make cups too thick, they will become hard to bite
  •  Cook rabdi on low flame till it coats the back of spoon. It will ger more after cooling.
  • Don’t boil milk on high flame, it will stick and burn at bottom.

Ingredients
  • 1 ½ cup Seviyan (thin, broken)
  • 1 tbsp Ghee
  • ¼ cup Condensed Milk
  • 1 ¼ cup Full-fat milk
  • 3 tbsp Milk powder
  • 2 tbsp Custard powder
  • 2 ½ tbsp Sugar
  • ¼ tsp Cardamom powder
  • 6-7 strands Kesar
Instructions
  1. Break seviyan into small pieces with hands.
  2. Heat ghee on low flame, roast seviyan till light golden.
  3. On low flame, add condensed milk and mix for 1 minute till sticky.
  4. Grease muffin mould, press mixture while warm to make cup shape.
  5. Cool for 60 mins, then demould.
  6. Pour milk into a heavy pan, keep on low flame.
  7. Add milk powder, custard powder, sugar, cardamom powder and kesar strands directly into the milk.
  8. Whisk well with a hand whisk so no lumps remain.
  9. Cook on low flame with continuous stirring for 8-10 mins till it thickens and coats the back of spoon.
  10. Remove and cool completely. It will get thicker after cooling.
