If you’ve been on Instagram lately, you’ve definitely seen it a hot, gooey, molten chocolate cookie placed right on top of a cold vanilla ice cream scoop, cracking open to that Nutella lava centre. It’s that perfect hot meets cold, crunchy meets gooey dessert that everyone is obsessing over.
I tried the full batch but trust me, you don’t need a dozen cookies to live this dream. This is my small-batch, eggless version that makes just 2 big, bakery style molten cookies. Crisp on the outside, super soft and fudgy inside, with a molten Nutella heart, all served on a chilled ice cream scoop with a crunch of feuilletine.

INGREDIENTS USED IN VIRAL MOLTEN COOKIE
Butter
This is the base of our cookie. We use soft, room temperature butter, not melted. Soft butter creams beautifully with sugar and gives you that chewy, fudgy centre instead of a cakey cookie. Make sure it’s soft enough to leave a fingerprint, but not melting.
Brown Sugar
Brown sugar is the secret to a soft, chewy cookie that stays molten in the middle. It has molasses in it which adds moisture and that deep caramel, toffee flavour that pairs so well with chocolate and vanilla ice cream.
Castor Sugar
Just a tiny amount of white sugar is all we need. While brown sugar keeps the centre soft, castor sugar helps the edges spread and get that light, crisp golden edge. It balances the flavour so the cookie isn’t too heavy.
Curd
This is our egg replacer. Just one tablespoon of thick curd makes the cookie super soft, binds the dough together, and adds a little tang that makes the chocolate flavour pop. Make sure your curd is thick and at room temperature, and whisk it well before adding.
All Purpose Flour
Flour is what holds everything together. We are using just half a cup to keep the cookie intentionally under-baked and molten. Don’t pack the flour in the cup , spoon it and level it, otherwise your cookie will become hard and cakey.
Cocoa Powder
We use a dark, good-quality cocoa powder for that deep, rich chocolate flavour. Since this is a double chocolate cookie with Nutella inside, the cocoa ensures the cookie itself is intensely chocolatey and not overly sweet.
Cornflour
This is my bakery secret. Just a pinch of cornflour makes the cookies extra soft, tender, and melt-in-the-mouth. It prevents them from becoming hard after baking and gives you that gooey centre that stays soft even as it cools.
Baking Soda
We use both in very small amounts. Baking soda helps the cookie spread and gives it that beautiful crackled top, while baking powder gives it a little lift so it’s not dense. Too much will make it puff up like a cake we want it flat and fudgy.
Baking Powder
Gives a slight lift and makes the centre soft and tender, so the cookie stays fudgy and not dense.
Nutella
The star of the show! We freeze small scoops of Nutella and hide them inside the cookie dough. When baked, it melts into a lava pool that oozes out when you cut the cookie on top of the ice cream. This hot-cold contrast is everything.
Ice Cream Scoop
A simple vanilla ice cream scoop is the base. The cold, creamy vanilla cuts through the rich, warm chocolate cookie and makes every bite balanced. Use a good quality vanilla and freeze the scooped balls for 10 mins before serving so they don’t melt instantly.
Feuilletine
Feuilletine is those crispy, flaky little caramelized crepe flakes. That final sprinkle on top adds a much-needed crunch and a professional, bakery-style finish. If you don’t have it, you can use crushed waffle cones or cornflakes.

TIPS TO MAKE VIRAL MOLTEN COOKIE
- This is non-negotiable. Scoop 4 tsp of Nutella onto parchment paper and freeze for at least 30-45 mins. If you put soft Nutella inside, it will leak out while baking.
- Once you add the flour, mix just until no dry streaks are visible. Overmixing will make the cookies tough and cakey, not molten.
- After you wrap the dough around the frozen Nutella, chill the cookie balls in the fridge for 15 mins. Cold dough means thicker cookies that hold the lava inside.
- Bake at 180°C for only 9-11 mins. The cookies will look soft and underdone in the centre when you take them out, and that’s exactly what you want. They will set as they cool but stay molten inside.
