This recipe requires minimal equipment. We need Katoris or heat-safe ramekins to bake the cake in.
Measuring cups and spoons are integral for everyone who intends to bake and aids in measuring the ingredients with precision.
A good mixing bowl to combine everything is necessary. You also need an airfryer to bake the cakes and a whisk to combine all the ingredients.

TIPS TO MAKE RED VELVET BUTTER CAKE IN KATORI
1. Brush the insides of the katori thoroughly with melted butter/oil and add a circular parchment paper at the bottom so that the cake releases easily without tearing.
2. Fill your katori only halfway to leave ample room for the cake to expand without overflowing.
3. Cooking at a slightly lower temperature instead of the standard 180 degrees gives the heat time to penetrate the deep katori to bake the center without scorching the top.
4. Place the chocolate callets after the cake is fully baked. It will melt the chocolate nice without caramelising the chocolate in the airfryer.
5. Prefer using a gel food colour instead of powdered food colours. Gel colours give better colour in less quantities and are much easier to distribute in the batter evenly.
- ½ cup warm milk
- 1 tsp vinegar
- 100 gm softened butter
- ¾ cup castor sugar
- ½ cup yoghurt
- ½ tsp red food colour
- 1 + ¼ cup all purpose flour
- 1 tbsp cocoa powder
- 1 tsp baking powder
- ¼ tsp baking soda
- ¼ cup milk and white chocolate callets (mixed), to top
- Add vinegar to warm milk and mix till it curdles. Set it aside.
- Add the softened butter and castor sugar in a bowl. Whisk them well until pale.
- To this, add the yoghurt, milk mixture and red colour. Give it a good whisk.
- Now add in the dry ingredients - all purpose flour, cocoa powder, baking powder and baking soda.
- Fill the batter into greased katoris upto a half katori mark.
- Place the katoris carefully in your air fryer and bake at 160 degrees for 15-20 mins or until a skewer inserted in the centre comes out clean.
- Place mixed chocolate callets on warm cakes and enjoy!
