These elegant prune cookie sticks are all about subtle flavours and delicate textures. Made with a simple shortbread-style dough, cold butter is gently rubbed into flour and icing sugar to create that classic sandy base, giving the cookies their light, crumbly bite. Finely chopped prunes add a natural sweetness and a soft chew, perfectly balancing the richness of the butter without making the cookies heavy or overly sweet.
The dough is rolled thin and chilled before baking, which helps the sticks hold their shape and bake evenly. Once in the oven, they turn lightly golden at the edges while staying tender inside. After cooling, each stick is dipped into silky melted white chocolate, adding a smooth, creamy finish that pairs beautifully with the mild fruitiness of prunes. A touch of lavender gel colour gives them a soft, aesthetic look, making them ideal for festive platters, edible gifting, or an elevated tea-time treat.
Crisp, buttery, lightly sweet, and visually stunning—these prune cookie sticks are proof that simple ingredients can create something truly special. Perfect for when you want a refined homemade cookie that feels both comforting and luxurious.
