ATTA JAM COOKIES IN A KADHAI

These charming Atta Jam are a nostalgic nod to childhood snacks. Made with whole wheat flour (atta), they bring a wholesome, nutty base that’s both flavorful and satisfying. The base is tender and melt-in-your-mouth, thanks to generous use of butter and using atta adds a hearty, slightly coarse texture compared to refined flour cookies.  These treats carry echoes of homemade goodness—simple, comforting and unpretentious—perfect for tea time, snack moments or a bite of childhood memory.

INGREDIENTS USED IN ATTA JAM COOKIES

  • BUTTER

Softened butter is easier to cream with sugar, which helps to incorporate air into the dough, making the cookies light and slightly crisp. I use this salted butter for my recipes. It helps the cookies spread evenly during baking, ensuring a beautifully uniform texture.   • SUGAR

  • ATTA (WHOLE WHEAT FLOUR)

Wholewheat flour provides the structure to the cookies. It has more fiber and nutrients compared to all-purpose flour, giving the cookies a denser texture and a slightly nutty flavor. It also absorbs more moisture, which can affect the cookie’s softness. For anyone looking to make their treats a bit healthier, using whole wheat flour is a smart way to make cookies more wholesome without sacrificing taste.   • MILK

I use this milk for my recipes. Milk also helps in enriching the dough with its creamy texture and enhancing the overall flavor. It helps to moisten and bind the ingredients, ensuring the dough comes together smoothly and holds its shape during baking. The milk adds a subtle, creamy sweetness that complements the rich buttery notes, contributing to a balanced and indulgent flavor profile.

  • CORNFLOUR

Cornflour (cornstarch) helps to soften the texture of the cookies by reducing the protein content of the flour mixture. This results in a more tender, melt-in-the-mouth texture. It also helps to give the cookies a slightly crumbly and light consistency.

EQUIPMENTS USED IN ATTA JAM COOKIES

The kind of equipment you use when you’re baking makes a huge difference to the end result! I would recommend you to use good quality mixing bowls and other equipment so that your Atta Jam Cookies comes out delicious!

Measuring Cups and Measuring Spoons. are an integral part of any baker’s kitchen and it’s very important to measure ingredients with precision. Not a single day goes by in my kitchen when I don’t use a spatula and a whisk. 

You will also need a piping bag and a nozzle tip to give the cookies their desired shape and for the no-oven setup, you will need a large kadhai to put the cookies in. The parchment paper I use is linked here.

TIPS TO KEEP IN MIND WHILE MAKING THE ATTA JAM COOKIES

  1. Ensure the butter is at room temperature. Cold butter won’t cream properly, and melted butter will make the dough too soft.
  2. The dough should be soft and pipeable. If it’s too stiff, add a teaspoon of milk at a time until the desired consistency is achieved.
  3. Chilling helps the cookies hold their shape while baking and prevents spreading.
  4. Let the cookies cool on the tray for a few minutes before transferring—they’re delicate when hot but firm up as they cool.

ATTA JAM COOKIES IN A KADHAI

Ingredients
  • ½ cup (113g) butter, softened
  • ¼ cup sugar
  • 1 cup atta (whole wheat flour)
  • 1 tbsp cornflour
  • ¼ cup milk
  • 2-3 tbsp jam
Instructions
  1. In a bowl, add in the softened butter and sugar. Whisk it well till it turns pale and fluffy. This process is known as creaming.
  2. Once done, mix in the atta and cornflour. Bring the dough together.
  3. Add in the milk and mix well to form a smooth pipeable batter.
  4. Preheat your kadhai. Add in salt in the base and place a stand over it. Cover with a lid.
  5. Transfer the cookie dough in a piping bag fitted with a nozzle.
  6. Pipe the cookies onto a metal plate lined with parchment paper and make an indent in the centre of the cookie with the pad of your thumb.
  7. Fill a piping bag with jam and pipe the jam in the indent.
  8. Place the metal plate on top of the stand. Cover the kadhai with a lid and bake the cookies for 17-20 minutes on low heat.
  9. Let the cookies cool slightly and come to room temperature before consuming.
