ATTA JAM COOKIES IN A KADHAI
- ½ cup (113g) butter, softened
- ¼ cup sugar
- 1 cup atta (whole wheat flour)
- 1 tbsp cornflour
- ¼ cup milk
- 2-3 tbsp jam
- In a bowl, add in the softened butter and sugar. Whisk it well till it turns pale and fluffy. This process is known as creaming.
- Once done, mix in the atta and cornflour. Bring the dough together.
- Add in the milk and mix well to form a smooth pipeable batter.
- Preheat your kadhai. Add in salt in the base and place a stand over it. Cover with a lid.
- Transfer the cookie dough in a piping bag fitted with a nozzle.
- Pipe the cookies onto a metal plate lined with parchment paper and make an indent in the centre of the cookie with the pad of your thumb.
- Fill a piping bag with jam and pipe the jam in the indent.
- Place the metal plate on top of the stand. Cover the kadhai with a lid and bake the cookies for 17-20 minutes on low heat.
- Let the cookies cool slightly and come to room temperature before consuming.
