CHOCOLATE ATTA CAKE IN KATORI

This Chocolate Atta Cake in a Katori is the perfect little treat when you’re craving something chocolatey, comforting and homemade. Made with wholesome atta, naturally sweet jaggery and creamy yoghurt, these individual cakes are soft, moist and full of rich chocolate flavour.

The best part? Each cake is baked right inside a katori, making it super convenient to prepare and serve. A generous topping of chopped almonds adds a lovely crunch, while the chocolate callets melt into little pockets of gooey chocolate goodness.

Made without refined flour and baked easily in an air fryer, this recipe is simple enough for everyday baking but delicious enough to enjoy as a special dessert. Serve it warm with a scoop of ice cream, a drizzle of chocolate sauce or simply enjoy it straight from the katori.

INGREDIENTS USED IN CHOCOLATE ATTA CAKE IN A KATORI

  • YOGURT

Yogurt provides the moisture, binding, and slight richness that eggs typically offer in cake recipes. When you mix yogurt with baking soda, it starts to foam and becomes frothy — this is a chemical reaction that releases carbon dioxide. These air bubbles get trapped in the batter and help the cake rise and become fluffy without any eggs. It also balances the sweetness and prevents the cake from tasting too flat. Cakes made with yogurt tend to stay fresh and soft longer, making this recipe great for storing for a day or two without drying out.

 

  • MILK

Milk, in this recipe is the main wet ingredient. It acts as a great egg replacer and still adds protein to the dish. The milk is what gets absorbed by the atta and adds keeps the whole thing moist. I have used Nestle toned milk for this recipe.

  • OIL

Cakes made with oil tend to be more tender and less crumbly compared to those made solely with butter. Oil does not solidify at room temperature like butter does, which means the flavors in the cake remain more evenly distributed and noticeable even after the cake cools down.

  • WHOLEWHEAT FLOUR

Whole wheat flour retains the bran and germ components of the wheat kernel, which are rich in dietary fiber, vitamins and minerals. This enhances the nutritional content of cakes. The bran in whole wheat flour absorbs more liquid than refined flour, resulting in a dough or batter that may require additional moisture.

  • LEAVENING AGENTS

Baking powder and baking soda are used in this cake recipe as raising agents. There are no ingredients, like egg, in this recipe that contributes to the rising of the cake and giving it a lighter crumb and texture. Hence, both of these leavening agents are added to the batter.

  • COCOA POWDER

Since it’s a Chocolate Cake recipe, one of the main ingredients to impart chocolate flavor is cocoa powder. . It gives that immense chocolate flavour to any baked good. You can use any good quality cocoa powder which is easily available to you in nearby grocery stores.

This recipe comes together quickly and hardly needs any equipment.

You need mixing bowls to make the cake batter.
I have made this in katoris easily available at homes.

TIPS TO MAKE ATTA CHOCOLATE CAKE IN KATORI

  1. Whisk the yoghurt and baking soda well until the mixture becomes light and frothy. This helps create a softer, fluffier cake.
  2. Use finely grated or powdered jaggery so it dissolves easily into the batter. If your jaggery has lumps, sieve it before using.
  3. Make sure the yoghurt and milk are at room temperature for a smooth, well-combined batter.
  4. Sift the atta, cocoa powder and baking powder to avoid lumps and ensure an even, airy texture.
  5. Fold the dry ingredients gently into the wet mixture. Avoid overmixing, as atta can make the cake dense if the batter is mixed too much.
  6. Grease and line the katoris properly so the cakes release easily after baking.
  7. Fill each katori only about two-thirds full, leaving enough space for the cakes to rise.
  8. Chop the almonds into small pieces so they toast evenly without becoming too hard.
  9. Add the chocolate callets on top just before baking for little pockets of melted chocolate.
  10. Preheat the air fryer for 3–5 minutes at 180°C for more even baking.
  11. Air-fryer temperatures can vary, so start checking the cakes around the 17–18 minute mark. Insert a toothpick into the centre; it should come out clean or with a few moist crumbs.
  12. Allow the cakes to rest in the katoris for 5–10 minutes before serving. They will set slightly and become easier to handle.

Ingredients
  • 1 cup yoghurt
  • ½ tsp baking soda
  • ¼ cup oil
  • ½ cup jaggery
  • ¼ cup milk
  • 1 + ¼ cup atta
  • ¼ cup cocoa powder
  • 1 tsp baking powder
  • 3 tbsp almonds, chopped
  • 2 tbsp chocolate callets
Instructions
  1. Add yogurt and baking soda in a bowl and whisk till it becomes frothy and voluminous.
  2. ⁠Add jaggery, oil and milk to the same mixture. Mix well until fully combined.
  3. ⁠Sift the whole wheat flour, cocoa powder and baking powder to the wet ingredients and fold evenly to form a smooth cake batter.
  4. ⁠Pour the batter evenly in 4 greased and lined katoris.
  5. ⁠Top it up with chopped almonds and chocolate callets.
  6. ⁠Place the katoris in an air fryer and bake at 180C for 20 minutes.
