RED VELVET BUTTER CAKE IN KATORI

If you thought baking a show-stopping Red Velvet cake required heating up a massive oven, waiting an hour, and dirtying every mixing bowl in your kitchen, think again! Today, we are bringing a luxurious bakery favorite right to your air fryer with these individual Red Velvet Butter Cake in Katori.

Super moist, rich with butter, and perfectly portioned into cozy single-serve katoris (ramekins), this recipe combines the classic velvety crumb of red velvet with the ease of modern air-fryer baking. Topped off with warm, melty milk and white chocolate callets, it’s the ultimate comfort dessert when you want something impressive in under 20 minutes.

INGREDIENTS USED IN RED VELVET BUTTER CAKE IN KATORI

  • MILK + VINEGAR

Combining Milk with vinegar creates an instant buttermilk substitute that introduces vital moisture and acetic acid into the batter. The acid works on two fronts: it weakens gluten bonds to create a softer, more velvety crumb, and it reacts immediately with the chemical leaveners to generate carbon dioxide gas bubbles that lift the dense butter batter during baking.

  • BUTTER

Softened Butter  serves as the primary fat and flavor foundation of the cake, driving both taste and crumb structure. During the initial creaming step, the fat traps air bubbles that expand when heated, giving the cake a light, airy rise. Furthermore, the fat molecules coat the proteins in the flour, preventing excessive gluten formation and ensuring the final katori cake remains remarkably tender rather than tough or rubbery.

  • SUGAR

Castor Sugar does far more than simply sweeten the batter; its fine crystal size is critical for proper aeration during creaming with the butter. Baking soda is a concentrated alkaline leavening agent that activates immediately upon contact with the acids in the vinegar and yoghurt. This rapid initial reaction releases a quick burst of carbon dioxide gas before the cake enters the air fryer, helping to kickstart the rise and neutralize excess acidity for a balanced taste.

  • CHOCOLATE CALLETS

Milk and white chocolate callets function as a warm, self-melting topping that replaces traditional cream cheese frosting. When scattered over the hot cakes straight out of the air fryer, the high cocoa-butter content allows the callets to melt effortlessly from the residual heat, creating a silky, luxurious finish with zero extra prep work.

EQUIPMENT YOU NEED FOR RED VELVET BUTTER CAKE IN KATORI

This recipe requires minimal equipment. We need Katoris or heat-safe ramekins to bake the cake in.

Measuring cups and spoons are integral for everyone who intends to bake and aids in measuring the ingredients with precision.

A good mixing bowl to combine everything is necessary. You also need an airfryer to bake the cakes and a whisk to combine all the ingredients.

TIPS TO MAKE RED VELVET BUTTER CAKE IN KATORI

1. Brush the insides of the katori thoroughly with melted butter/oil and add a circular parchment paper at the bottom so that the cake releases easily without tearing.
2. ⁠Fill your katori only halfway to leave ample room for the cake to expand without overflowing.
3. ⁠Cooking at a slightly lower temperature instead of the standard 180 degrees gives the heat time to penetrate the deep katori to bake the center without scorching the top.
4. Place the chocolate callets after the cake is fully baked. It will melt the chocolate nice without caramelising the chocolate in the airfryer.
5. ⁠Prefer using a gel food colour instead of powdered food colours. Gel colours give better colour in less quantities and are much easier to distribute in the batter evenly.

Ingredients
  • ½ cup warm milk
  • 1 tsp vinegar
  • 100 gm softened butter
  • ¾ cup castor sugar
  • ½ cup yoghurt
  • ½ tsp red food colour
  • 1 + ¼ cup all purpose flour
  • 1 tbsp cocoa powder
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ cup milk and white chocolate callets (mixed), to top
Instructions
  1. Add vinegar to warm milk and mix till it curdles. Set it aside.
  2. ⁠Add the softened butter and castor sugar in a bowl. Whisk them well until pale.
  3. To this, add the yoghurt, milk mixture and red colour. Give it a good whisk.
  4. Now add in the dry ingredients - all purpose flour, cocoa powder, baking powder and baking soda.
  5. ⁠Fill the batter into greased katoris upto a half katori mark.
  6. Place the katoris carefully in your air fryer and bake at 160 degrees for 15-20 mins or until a skewer inserted in the centre comes out clean.
  7. Place mixed chocolate callets on warm cakes and enjoy!
