TIPS TO MAKE COOKIE DOUGH BROWNIE PUDDING

- Whisk the eggs and sugar until the mixture becomes slightly thick and pale rather than just combining them. This step helps create a glossy top and improves the overall texture.
- Once you add the flour and cocoa powder, mix only until everything is just combined. Overmixing can develop gluten, which will make the brownie dense instead of soft and pudding-like.

- Cookie dough-
- ¼ cup melted butter
- ¼ cup castor sugar
- 1 tsp vanilla extract
- ½ cup all-purpose flour
- ¼ tsp baking soda
- 1-2 tbsp milk
- ¼ cup chocolate callets
- Brownie-
- 1½ cups dark chocolate(280g)
- ¾ cup butter
- 1 cup caster sugar(170g)
- ¾ cup all-purpose flour
- 4½ tbsp cocoa powder
- 3 eggs
- Preheat oven to 180C.
- For the cookie dough layer, combine the melted butter and castor sugar till pale and fluffy.
- Add the vanilla extract, flour and baking soda.
- Combine all the ingredients and add in the milk 1 tbsp at a time (you may not require the entire quantity).
- For the brownie pudding - Combine melted butter and melted chocolate together.
- In another bowl whisk together eggs and sugar. Combine chocolate mixture with egg mixture.
- Lastly add in cocoa powder and flour
- Pour the brownie batter in the oval dish and top it up with patches of cookie dough and chocolate callets.
- Bake for 25-30 mins.
