Custard powder

The vanilla flavour of custard powder serves as a versatile base that pairs well with other components of the pudding.
The thickened custard acts as a stabilizer, helping to integrate all the ingredients smoothly.
Sugar
Sugar when heated with water in the microwave, melts and caramelizes, turning golden brown. This creates a rich, slightly bitter caramel flavor that balances the sweetness of the pudding. It also forms the signature syrupy topping once the pudding is flipped.
Sugar is mixed with milk and custard powder to sweeten the custard and enhance its flavor. It also helps in stabilizing the custard texture, making it smooth and creamy. When heated, sugar dissolves fully, ensuring a consistent taste throughout the pudding.
Milk
Milk acts as the primary liquid that combines with custard powder to create a smooth, creamy pudding. It helps evenly dissolve the sugar and custard powder, preventing lumps. It tones down the sweetness of sugar and caramel, creating a well-balanced dessert. I have used Nestle milk for this recipe. You can opt for non-dairy and healthier options also, like, oat milk or almond milk.

EQUIPMENTS USED FOR MAKING 3-INGREDIENT CARAMEL PUDDING
A correct proportion of all the ingredients will guarantee the best taste, so you will need measuring spoons and measuring cups to measure quantities of ingredients.
You will need a big bowl to heat and make the custard . And 2 ramekins to make the caramel and set the pudding in.
Spatulas and whisks are my all-time favourite kitchen equipment.
TIPS TO MAKE 3-INGREDIENT CARAMEL PUDDING
- Caramel can burn quickly, so keep an eye on it after 2 minutes. Stir it gently if needed.
- Caramel stays extremely hot even after microwaving. Use oven mitts or let it cool slightly before handling.
- The custard should coat the back of a spoon when done. If it’s too thin, microwave for another 30 seconds.
- Placing hot custard in the fridge can cause condensation, affecting texture. Let it cool to room temperature first.
- Dip the ramekin’s bottom in warm water for 10 seconds before flipping; this helps loosen the caramel.

- For the caramel
- 2 tbsp sugar
- 2 tsp water
- For pudding
- 1+1/4 cup milk
- 2 tbsp sugar
- 2 tbsp custard powder
- Add 1 tbsp sugar and 1 tsp water each in 2 microwave safe ramekins and heat on regular heating mode in a microwave for 3 mins. Make sure to check for the colour after 2 mins and stop and stir in between if required. The sugar should caramelise and become golden brown.
- Now, in a bowl, add milk, sugar and custard powder and whisk till there are no lumps. Heat it in a microwave at regular heating mode for 4 minutes. Stop and stir the mixture after each minute to avoid the custard getting burnt or becoming too lumpy.
- Pour the custard over the set caramel and refrigerate for at least 4 hours. This recipe makes two caramel puddings.
- Carefully demould it by keeping a plate on top of the ramekin and quickly flipping it to release.
