If you follow me on Instagram, you might remember me talking about my worst kitchen disaster last month- a flour less orange cake that was extremely bitter. But I redeemed myself this week with this delicious orange cake that is flavorful and dense. The main base of this cake is almond flour. I made my own almond flour using organic almonds from 24 Mantra organic. Simply blanch 3 cups of organic almonds and then process them into a fine flour. Make sure you don’t process for too long otherwise you will end up with almond butter! I top the cake with meringue frosting but it is equally good as it is. You can find the recipe of meringue frosting in this blog post-
INGREDIENTS
• 3 cups ( 300gm) organic almonds, blanched and processed into a fine flour
• 1 cup organic sugar
• 3 oranges, peeled and seeded
• 3 eggs
• 1 tsp baking powder
PROCEDURE
• Pre-heat oven to 180C. Line a 9″springform pan.
• Place the peeled and seeded oranges in a food processor and process until smooth
• In a separate bowl, beat eggs and sugar. Add oranges, almond meal and baking powder. Mix until combined.
• Pour the batter into the prepared pan and bake at 180C for about 1 hour.
