If you have ever craved a decadent, velvety chocolate pudding that holds its shape beautifully without any fuss, you are going to fall in love with this recipe. Traditional custards can sometimes be finicky, requiring constant attention or delicate egg-tempering to avoid curdling. But what if you could make an intensely rich, mirror-glossy chocolate pudding that sets into clean, sliceable squares using a foolproof stovetop method?
By combining cocoa powder, rich milk, a touch of cream, and the natural setting power of agar-agar, this recipe lets you cook everything right in a single saucepan, pour it into a rectangular dish, and let your refrigerator do the rest. Whether you are slicing them into neat, bite-sized cubes for a gathering or grabbing a sweet treat straight from the fridge, these chocolate pudding bites deliver maximum indulgence with zero kitchen stress.

INGREDIENTS USED IN MAKING CHOCOLATE PUDDING SQUARES
MILK
Full-fat milk forms the primary structural liquid body of the pudding. It supplies essential water and milk proteins that bind harmoniously with the cocoa solids, creating a classic, smooth chocolate-milk base that balances the richness of the cream.
AGAR AGAR
Derived naturally from red algae, agar-agar serves as the structural backbone of these pudding bites. Unlike animal-based gelatin, agar-agar sets firmly at room temperature and doesn’t melt easily, giving your dessert a clean, sliceable consistency while keeping it entirely vegetarian and reliable.
COCOA POWDER
This is the ultimate engine of flavor and visual appeal in the recipe. High-quality unsweetened Dutch-processed cocoa powder provides that deep, bittersweet, complex chocolate punch, infusing every single square with a rich, aromatic profile.
SUGAR
Beyond merely sweetening the robust bitterness of the unsweetened cocoa powder, sugar functions as a vital humectant. It attracts and retains moisture within the mixture, preventing the set pudding from turning dry, rubbery, or rigid, and ensuring each bite remains lush and yielding on the palate.
WATER
Water acts as the foundational solvent medium for the entire mixture. By providing a clean liquid base right from the start, it ensures that the castor sugar dissolves completely and the agar-agar powder hydrates evenly before heavy dairy fats are introduced into the pan.
WHIPPING CREAM
Whipping cream introduces essential, luxurious dairy fats into the saucepan. Because plant-based agar-agar can sometimes naturally yield a firmer, more gel-like or brittle set on its own, the suspended fat globules from the cream soften the internal matrix, imparting a velvety, melt-in-the-mouth texture.
DARK CHOCOLATE
Finely chopped dark chocolate acts as a luxury flavor and texture enhancer. When stirred into the hot liquid base right after the heat is turned off, it melts seamlessly, injecting extra cocoa butter and residual solids that heighten the glossy sheen, deepen the mouthfeel, and round out the chocolate profile.
EQUIPMENT USED FOR MAKING CHOCOLATE PUDDING SQUARES
This recipe doesn’t require a lot of equipment. Measuring Cups and Measuring Spoons are an integral part of any baker’s kitchen and it’s very important to measure ingredients with precision.
A heavy bottom saucepan and a whisk is required to combine everything together. A spatula is my favourite kitchen equipment.
You also need an induction or a heat source to heat the mixture.
For the mould to set the pudding, I have used a square pan, you can use any shape of baking pan to set the pudding.
TIPS TO MAKE CHOCOLATE PUDDING SQUARES
- Do Not Skip the Full Boil: Agar-agar is a stubborn ingredient—if you don’t bring the liquid to a proper rolling boil and let it bubble for a minute, it will fail to activate, and your pudding won’t set in the fridge.
- Strain for Perfection: If you notice any tiny micro-lumps of cocoa powder before pouring it into your dish, pass the hot liquid through a fine-mesh sieve into your pan for an immaculate, glass-smooth finish.
- Chill Completely: While it sets relatively fast, letting it sit undisturbed in the fridge for a full 4 hours ensures the structure fully tightens up, allowing you to slice clean, sharp bite-sized squares.
- 180ml water
- 110g caster sugar
- 280ml milk
- 50g cocoa powder
- 95ml whipping cream
- 4g agar agar
- Pinch of salt
- 30g dark chocolate
- In a saucepan, add all the ingredients except for dark chocolate and heat on medium heat. Whisk continuously until the mixture is uniform and completely smooth with no dry pockets of cocoa powder.
- Bring the mixture up to a rolling boil, ensuring it bubbles actively for at least 1–2 minutes.
- Turn off the heat immediately. Toss the finely chopped dark chocolate directly into the hot saucepan. Let it sit undisturbed for 30 seconds so the residual heat melts the chocolate, then whisk smoothly until glossy and emulsified.
- Pour the warm liquid mixture into your dish. Let it cool down to room temperature on the counter , then transfer it to the refrigerator to chill and set completely for at least 3 to 4 hours.
- Once fully set, dust it with cocoa powder, slice the firm pudding into neat, bite-sized squares, and serve chilled!
