MANGO KULFI BITES
 
 
Ingredients
  • 2 cups milk
  • 14 dates , deseeded and soaked
  • ¼ cup cashews, soaked
  • 1 cup mango chunks
  • chopped pistachios and saffron strands, for garnish
Instructions
  1. Start by soaking deseeded dates and cashews in warm water for 15-20 mins.
  2. In a sauce pan add milk, soaked dates, cashews and cook on medium heat until the milk comes to a boil and dates and cashews becomes soft and mushy.
  3. ⁠In a blender jar add mango chunks and milk mixture and blend till you achieve a smooth consistency.
  4. ⁠Take a silicone ice cube tray and add chopped pistachios and saffron strands in the bottom.
  5. ⁠Pour the kulfi mixture over it, cover it with a foil and insert sticks in the middle.
  6. ⁠Let it refrigerate for 5-6 hours or till the kulfi is set.
  7. Demould your mango kulfi bites and enjoy.
