MANGO KULFI BITES
- 2 cups milk
- 14 dates , deseeded and soaked
- ¼ cup cashews, soaked
- 1 cup mango chunks
- chopped pistachios and saffron strands, for garnish
- Start by soaking deseeded dates and cashews in warm water for 15-20 mins.
- In a sauce pan add milk, soaked dates, cashews and cook on medium heat until the milk comes to a boil and dates and cashews becomes soft and mushy.
- In a blender jar add mango chunks and milk mixture and blend till you achieve a smooth consistency.
- Take a silicone ice cube tray and add chopped pistachios and saffron strands in the bottom.
- Pour the kulfi mixture over it, cover it with a foil and insert sticks in the middle.
- Let it refrigerate for 5-6 hours or till the kulfi is set.
- Demould your mango kulfi bites and enjoy.
