Line a cupcake tray with paper liners. This recipes makes 6 peanut butter cups.
In a mixing bowl, beat together the peanut butter and powdered sugar until well combined. The consistency will be thick ,like dough. Set aside.
Melt the chocolate on double boiler. Place the chocolate in a heatproof bowl and place it over a saucepan with simmering water. Alternatively, melt it in microwave giving it a good mix after 30 seconds intervals.
Using a spoon, pour melted chocolate on the base of each liner.
Once the bottom layer is set, take about 1 tablespoon peanut butter mixture and form a ball that is smaller than the mould.
Pour the remaining melted chocolate over the peanut butter layer till it is evenly spread on the top.
Let these cups refrigerate for 5-10 minutes until set.
