BROOKIES
 
 
Ingredients
  • ¾ cup chocolate (131g)
  • ¼ cup butter(55g)
  • ½ cup all purpose flour
  • 1+1/2 tbsp cocoa powder
  • ½ teaspoon baking powder
  • 1 egg
  • 6 tbsp caster sugar
  • 4 tbsp light brown sugar
  • Sea salt, to top
Instructions
  1. Preheat the oven to 180°C. Line a baking tray with parchment paper or a silicone mat.
  2. Melt the chocolate and butter in a double boiler set over medium heat. Keep stirring continuously to make sure the chocolate doesn't burn. Once the chocolate and butter have melted, take the saucepan off the heat and allow the mixture to cool
  3. In a large bowl, whisk together the eggs, caster sugar and light brown sugar using an electric mixer until pale and fluffy. Add the cooled chocolate mixture and mix well.
  4. Add flour, cocoa powder, baking powder and mix well to form a batter like consistency.
  5. Using an ice-cream scoop, scoop out equal-sized portions of the cookie mixture onto the prepared baking tray. Keep sufficient space between them as they will spread. Bake for 12-15 minutes. Let them cool on the tray before removing them. Sprinkle some sea salt on top.
