EGGLESS MOCHA WALNUT CAKE
 
 
MY FAVOURITE MOCHA WALNUT CAKE
Ingredients
  • For the cake-
  • 1 cup yogurt/ dahi
  • ½ tsp baking soda
  • One espresso shot (1 tbsp coffee + 3 tbsp hot water)
  • ½ cup oil
  • 1+1/4 cup atta (whole wheat flour)
  • ¾ cup sugar
  • ¼ cup cocoa powder
  • 1 tsp baking powder
  • ⅓ cup milk
  • ½ cup walnuts, chopped
  • For the glaze-
  • 1 cup icing sugar
  • 1 tbsp coffee
  • 3 tbsp milk
Instructions
  1. Preheat the oven at 180 degrees Celsius and line a 6-inch springform pan.
  2. Mix yogurt and baking soda together and keep it aside for few minutes so that it foams up.
  3. Next, add in espresso shot, oil, sugar and milk together and mix everything together until it combines fully.
  4. In the same bowl, sift in atta, cocoa powder, baking powder, and walnuts and mix everything together. Do not over mix at this stage.
  5. Pour the batter in the lined pan and top it with more walnuts.
  6. Bake at 180 degrees Celsius for 30-35 minutes.
  7. For glaze – mix icing sugar, coffee and milk together.
  8. Pour the glaze over the cake when it cools down and serve!
