For dough-
  • 1 cup whole wheat flour
  • ¼ cup rolled oats
  • ½ cup cold butter, cubed
  • 4 tablespoons granulated sugar
  • 4 tablespoons ice cold water
For filling-
  • 1 cup strawberries
  • 5-6 figs
  • 1 tablespoon lemon juice
  • 1 tablespoon corn flour
  1. In a food processor, combine whole wheat flour, rolled oats, cold butter and sugar
  2. Add in the cold water and pulse till the mixture holds together when pinched
  3. flatten the dough into a disk and refrigerate for 30 minutes
  4. To make the filling, combine the strawberries and figs
  5. Toss them in lemon juice and corn flour slurry (cornflour mixed with water)
  6. On a parchment, roll out the dough into a circle of about ¼ inch thickness
  7. Leaving about 1 inch borders, spread the filling onto the dough
  8. Fold the edges of the galette over the fruit filling
  9. Brush the edges with eggwash/milk
  10. Bake at 200C for 20-30 minutes or until the crust is golden brown
  11. Let it cool on the tray before lifting and serving with vanilla ice cream
