Eggless Red Velvet Cookies-
  • ½ cup butter, at room temperature
  • ½ cup lightly packed brown sugar
  • ½ cup castor sugar
  • 1 flax egg (1 tablespoon of ground flax seeds + 2 tablespoon of water, mixed and rested for 5 minutes)
  • 1 teaspoon vanilla extract
  • 1 + ¼ cup all-purpose flour
  • 1 Tablespoon cornstarch
  • ½ teaspoon baking soda
  • 2-3 tablespoon of red food colour
  • ½ cup white chocolate chips
  1. Pre-heat your oven to 180C
  2. In a large bowl, beat the butter with brown sugar and castor sugar until the mixture is light and fluffy.
  3. Add the flax egg and vanilla to this mixture.
  4. In a separate bowl, mix together flour, baking soda and corn starch. Add the dry ingredients to the butter mixture until the dough comes together.
  5. Add 2-3 drops of red food colour and mix well.
  6. Add the white chocolate chips to the dough.
  7. Pop the dough into the refrigerator overnight or for at least 4 hours.
  8. Pre-heat the oven to 180C. On a baking tray lined with parchment paper/ silicon mat, scoop the cookie dough in equal sized balls.
  9. Use your fingers to gently press the dough balls to flaten them a little. Top with white chocolate chips.
  10. Bake the cookies for 12-15 minutes
  11. Let the red velvet cookies sit on the baking tray for another 10 minutes before you lift them.
