Cranberry and White Chocolate Cookies

Serves: 12 cookies
Ingredients
  • ½ cup unsalted butter, softened
  • ½ cup lightly packed brown sugar
  • ½ cup castor sugar
  • 1 egg, at room temperature
  • 1 tsp vanilla extract
  • 1+1/4 cup all-purpose flour
  • 1 tsp cornstarch/ corn flour
  • ½ tsp baking soda
  • ¼ cup dried cranberries
  • ¼ cup white chocolate chunks
Instructions
  1. Pre heat your oven to 170*C
  2. Beat butter and the sugars until the mixture is light and fluffy
  3. Beat in the egg. Add vanilla.
  4. Add the flour, baking soda and corn flour to the butter mixture and mix until the dough comes together.
  5. Scoop out your dough into balls of equal sizes on a baking tray lined with silicon mat or parchment paper
  6. Flatten them lightly using your fingers and place dried cranberries and white chocolate chunks on top.
  7. Bake the cookies for about 12-15 minutes or until the edges become golden brown.
  8. After taking the cookies out of the oven, let them rest on the baking tray for at least 10 minutes.
