Whole Wheat Strawberry Cake Recipe

Serves: one 9" cake
  • 2 cups whole-wheat flour, sifted
  • 2 teaspoons baking powder
  • 1 teaspoon lemon zest (optional)
  • ¾ cup butter, softened
  • 1 cup castor sugar
  • 2 teaspoons vanilla extract
  • 3 eggs
  • ½ cup milk
  • 1 cup strawberries sliced + more to decorate
  1. Pre-heat the oven to 180*C. Line a loaf pan with parchment paper.
  2. In a bowl, combine flour, baking powder and lemon zest.
  3. In a large bowl, cream butter and sugar together by beating them at high speed for about 3-4 minutes, until the mixture is light and fluffy.
  4. Beat in the vanilla.
  5. Add the eggs, one at a time and mix well after each addition. Mix in the milk.
  6. Fold dry ingredients into wet ingredients in three batches. Do-not over mix the batter.
  7. Carefully fold in the fresh strawberries.
  8. Pour the whole wheat strawberry cake batter into the prepared pan and bake at 180*C for 40 minutes or until a skewer inserted into the center comes out clean.
  9. Top with lightly whipped cream and fresh strawberries
