Ingredients
  • For the Coconut Candy
  • 1 tablespoon butter
  • 1¼ cups desiccated coconut
  • 1 cup condensed milk
  • For the Caramel Coating
  • 1 cup sugar
  • ½ cup water
  • 1 teaspoon white vinegar or lemon juice
Instructions
  1. Add the butter, desiccated coconut and condensed milk to a heavy-bottomed pan.
  2. Cook the mixture over low to medium-low heat, stirring continuously.
  3. Continue cooking until the mixture becomes thick enough to pull away from the sides and bottom of the pan. Transfer the mixture to a plate or bowl and allow it to cool until comfortable enough to handle.
  4. Once the mixture has cooled, lightly grease your hands with oil and roll small portions of the mixture into balls. Place them on a parchment-lined tray or plate and allow them to cool completely.
  5. To make the caramel, add the sugar, water and vinegar or lemon juice to a clean, heavy-bottomed saucepan. Place it over medium heat and allow the sugar to dissolve.
  6. Let the syrup cook until it develops a clear golden-amber colour.
  7. Insert a toothpick into each coconut ball and dip each ball into the hot caramel, turning it gently so that the coconut filling gets a thin, even coating.
  8. Allow the excess caramel to drip off before placing the candy onto parchment paper. Allow the Bala Baiana to cool completely at room temperature before serving.
