6-MINUTE MICROWAVE CHOCOLATE CAKE
- ¾ cup vegetable oil
- 1 cup jaggery powder
- 1 cup yogurt
- 6 tbsp milk
- 1+ ½ cup whole wheat flour
- ¾ cup cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- For the chocolate ganache
- 250g fresh cream
- 250g dark chocolate
- Grease a medium square microwave-safe glass dish lightly with a few drops of oil and line with parchment paper.
- In a large mixing bowl, combine vegetable oil, jaggery powder, yogurt and milk. Whisk vigorously for 2 to 3 minutes until the jaggery dissolves completely and the mixture turns smooth and glossy.
- Sift in whole wheat flour, cocoa powder, baking powder, and baking soda. Using a spatula, gently fold the dry ingredients into the wet mixture using a cut-and-fold method just until combined. The batter should be smooth, thick, and pourable.
- Pour the batter evenly into your prepared dish and bake for 6 minutes in the microwave on regular heating mode.
- While the cake cools slightly, prepare the ganache. Pour warm cream over chopped chocolate and mix until smooth and no lumps of chocolate remain.
- Pour the cooled chocolate ganache generously over the cake, spreading it all the way to the edges. Allow the ganache to set for 10 minutes, slice into neat squares, and serve warm!
