COOKIE DOUGH BROWNIE PUDDING
- FOR THE BROWNIE BATTER
- 1 cup dark chocolate, melted
- ¼ cup butter, melted
- 1 cup condensed milk
- ½ cup all-purpose flour
- ¼ cup cocoa powder
- 1 tbsp instant coffee
- 2 tbsp milk
- FOR THE COOKIE DOUGH
- 75g butter, softened
- 6 tbsp brown sugar
- 1 tbsp castor sugar
- 1 + ½ tbsp curd
- ¾ cup all-purpose flour
- ⅛ tsp baking soda
- ¼ tsp baking powder
- ½ tsp cornflour
- 3 tbsp chocolate callets
- ¼ cup chocolate chunks, to garnish
- For the brownie batter, add the melted chocolate to a bowl and mix in the butter. Whisk to combine.
- Next, add the condensed milk and mix it well too.
- Now, add the all-purpose flour, cocoa powder and instant coffee mixed with the milk into the mixture. Whisk everything together until well combined.
- For the cookie dough, cream the butter, brown sugar and castor sugar until pale.
- Add the curd and mix well with a spatula.
- Add the all- purpose flour, baking soda, baking powder, cornflour and mix everything well to form a smooth dough.
- Mix in the chocolate callets so they are evenly distributed.
- Cover the dough in cling wrap and freeze for atleast 1 hour.
- Transfer the brownie batter into an oven-proof glass baking dish. Tear the cookie dough in chunks and place it over the brownie batter in patches.
- Top this with more chocolate chunks and bake in a preheated 180°C oven for 20-25 minutes.
- Serve warm with some vanilla ice-cream or just as is and enjoy.
