COOKIE DOUGH BROWNIE PUDDING
 
 
Ingredients
  • FOR THE BROWNIE BATTER
  • 1 cup dark chocolate, melted
  • ¼ cup butter, melted
  • 1 cup condensed milk
  • ½ cup all-purpose flour
  • ¼ cup cocoa powder
  • 1 tbsp instant coffee
  • 2 tbsp milk
  • FOR THE COOKIE DOUGH
  • 75g butter, softened
  • 6 tbsp brown sugar
  • 1 tbsp castor sugar
  • 1 + ½ tbsp curd
  • ¾ cup all-purpose flour
  • ⅛ tsp baking soda
  • ¼ tsp baking powder
  • ½ tsp cornflour
  • 3 tbsp chocolate callets
  • ¼ cup chocolate chunks, to garnish
Instructions
  1. For the brownie batter, add the melted chocolate to a bowl and mix in the butter. Whisk to combine.
  2. Next, add the condensed milk and mix it well too.
  3. Now, add the all-purpose flour, cocoa powder and instant coffee mixed with the milk into the mixture. Whisk everything together until well combined.
  4. For the cookie dough, cream the butter, brown sugar and castor sugar until pale.
  5. Add the curd and mix well with a spatula.
  6. Add the all- purpose flour, baking soda, baking powder, cornflour and mix everything well to form a smooth dough.
  7. Mix in the chocolate callets so they are evenly distributed.
  8. Cover the dough in cling wrap and freeze for atleast 1 hour.
  9. Transfer the brownie batter into an oven-proof glass baking dish. Tear the cookie dough in chunks and place it over the brownie batter in patches.
  10. Top this with more chocolate chunks and bake in a preheated 180°C oven for 20-25 minutes.
  11. Serve warm with some vanilla ice-cream or just as is and enjoy.
