BADAM MILK
 
 
Ingredients
  • 4 cups (1 litre) milk
  • ½ cup sugar
  • 1 cup almonds(soaked and peeled) + ¾ cup milk
  • 1 tbsp custard powder + 2 tbsp milk
  • 2 tsp saffron strands + 2 tbsp milk
  • ½ tsp cardamom powder
  • 3 tbsp pistachios, slivered
  • 3 tbsp almonds, slivered
Instructions
  1. Soak ¾ cup almonds in water overnight.
  2. Peel the almonds and blend them into a thick paste along with ¾ cup milk.
  3. Now, set a large pot on medium heat and add 1 litre milk to it.
  4. Once it starts to simmer, add sugar, almond paste, custard powder slurry, saffron infused milk and cardamom powder.
  5. Bring it to a boil and heat until the milk thickens a bit.
  6. Add slivered almonds and pistachios and mix well.
  7. Let it come to room temperature before storing in bottles. Serve chilled.
