COFFEE ALMOND CAKE IN A MICROWAVE
- 1 cup milk, warm
- ½ tbsp vinegar
- 2 tsp coffee powder
- ¾ cup dates powder
- ¼ cup oil
- 2 tbsp yogurt
- ¾ cup whole wheat flour
- ½ tsp baking soda
- ⅓ cup chopped almonds
- Add vinegar, coffee and milk in a medium sized bowl. Let it sit for 5-7 minutes till the milk curdles.
- Add dates powder, oil and yogurt to the same bowl and whisk really well.
- Add whole wheat flour and baking soda and whisk until just combined.
- Spread the batter evenly once and add the chopped almonds on top.
- Microwave the cake on regular heating mode for 4 minutes on until a skewer inserted in the centre comes out clean.
