BISCOFF STUFFED MICROWAVE COOKIE
- 2 +1/2 tbsp biscoff spread
- ¼ cup butter, softened (55g)
- 2 tbsp icing sugar
- 1 tbsp milk
- 6 tbsp all purpose flour
- 2 tbsp cocoa powder
- For the topping
- White chocolate chips
- Milk chocolate chips
- Dark chocolate chips
- Biscoff cookie crumbs
- Scoop biscoff spread and place it on a parchment paper. Spread a little into a disc and freeze for at least 30 mins.
- Meanwhile, take softened butter and icing sugar in a bowl and mix until nicely combined.
- Add in the flour, cocoa powder and milk and mix to make a smooth dough.
- Press the cookie dough between your palms to flatten it and place the frozen biscoff disc in the centre.
- Fold the cookie dough and seal all around to make a smooth cookie dough ball.
- Place the cookie dough on a microwave safe dish and top it with white, milk and dark chocolate chips along with biscoff cookie chunks.
- Microwave on regular heating mode for 1 minute 30 second.
