COFFEE WALNUT CAKE IN DABBA
- 18 deseeded dates
- 1+1/2 cup milk
- 1+1/2 tbsp coffee
- ½ cup sunflower oil
- ¾ cup whole wheat flour
- ½ cup jowar flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ cup walnuts
- Start by preheating the oven at 180 C and grease and line a 6inch dabba.
- Combine hot milk and coffee and pour it over deseeded dates.Let it sit for 10 minutes till soft and mushy.
- Blend milk and dates together to form a smooth mixture.
- Transfer this mixture to a bowl and add oil . Whisk until well combined.
- Lastly add in wholewheat flour, jowar flour,baking powder and baking soda.
- Pour the batter in the prepared dabba and top it with whole walnuts.
- Bake for 45-50minutes or until a skewer inserted in the centre comes out clean.
