Eggless Banana Coconut Cake
  • 2 ripe bananas, mashed
  • 3 cups all purpose flour
  • 1 tsp cinnamon powder
  • 2 teaspoons baking powder
  • ¼ cup shredded coconut + more for the top
  • ¾ cup oil
  • 2 cups castor sugar
  • 1 cup Greek yogurt
  • 1 + ½  cup milk
  • 1 cup whipped cream
  1. Pre-heat the oven to 180C. Line a 9" round cake pan with parchment paper.
  2. In a medium bowl, whisk together flour, cinnamon powder, shredded coconut and baking powder
  3. In a large bowl, beat mashed bananas, sugar and oil until the mixture becomes pale yellow.
  4. Add yogurt and beat well
  5. Fold in flour mixture, alternating with milk.
  6. Pour the batter into the prepared cake tin and bake in the oven for 40 minutes or until a toothpick inserted in the center comes out clean. Let it cool completely
  7. Cover with whipped cream and top with shredded coconut
