EGGLESS CRANBERRY COOKIE STICKS
 
 
Ingredients
  • 1 cup all purpose flour
  • 6 tbsp icing sugar, sifted
  • ¼ tsp baking powder
  • ¼ cup (55g) butter, cold and cubed
  • ¼ cup cranberries, chopped
  • 3 tbsp milk
  • ¼ tsp vanilla extract
  • 1 cup ruby chocolate , melted
Instructions
  1. In a bowl, add flour, icing sugar , baking powder and cold butter. Using your fingers, rub the butter into the dry ingredients until the mixture resembles sandy texture.
  2. ⁠Now add chopped cranberries, milk and vanilla extract. Combine everything to form a smooth dough.
  3. ⁠Take two sheets of parchment paper and roll out the dough between them 1 cm thick.
  4. ⁠Chill the dough in the freezer for 10-15 minutes. Once frozen, cut it into sticks measuring 12 cm by 1 cm. This should yield about 20 sticks.
  5. Bake the cookies at 180 degrees in a preheated oven for 15-20 mins or until edges are golden brown.
  6. ⁠Once the cookies come at room temperature dip them in ruby chocolate and enjoy.
