SABUDANA KHEER
 
 
Ingredients
  • To soak-
  • 1 cup sabudana
  • 1 cup water
  • 1 tbsp ghee
  • 2 tbsp chopped cashews
  • 2 tbsp chopped almonds
  • 2 tbsp chopped pistachios
  • 1 cup soaked sabudana
  • 4 cups milk
  • 8-10 strands of kesar
  • 1 tsp elaichi
  • ½ cup sugar
Instructions
  1. Start by soaking 1 cup sabudana in water and let it sit for 1-2 hours.
  2. ⁠To make the kheer, set a Kadhai on low- medium heat and add ghee along with chopped cashews, almonds and pistachios.
  3. ⁠Roast the nuts for 3-4 minutes, until they are golden and fragrant.Once roasted, remove them from the kadhai and set it aside.
  4. ⁠In the same kadhai add soaked sabudana, milk, kesar strands and cardamom powder. Cook it on low- medium heat for 10-12 minutes or till the milk reduces and kheer starts to thickens. Make sure to continuously stir the kheer.
  5. ⁠Lastly add sugar and mix it well till all the sugar is dissolved.
  6. ⁠Garnish the kheer with chopped nuts and serve it warm or cold.
