CRÈME BRULEÈ FRENCH TOAST
 
 
Ingredients
  • For the custard
  • 2 tbsp custard powder + ¼ cup milk
  • ¾ cup milk
  • 2 tbsp sugar
  • 2 slices of brioche bread
  • For the french toast batter
  • ½ cup +2 tbsp milk
  • 1 tbsp custard powder
  • 1 tbsp icing sugar
  • ¼ tsp cinnamon powder
  • To brûlée
  • 1 tbsp sugar
Instructions
  1. For the custard- whisk together custard powder and ¼cup milk until smooth and lump free. Set this mixture aside.
  2. ⁠Take a heavy bottom saucepan, add milk, sugar and custard powder slurry in it. Continue whisking until the mixture thickens, then remove it from the heat and keep it aside.
  3. ⁠Take two slices of brioche bread. Cut out the center of one slice and set them aside.
  4. ⁠For the french toast batter- in a bowl, add milk, custard powder, icing sugar and cinnamon powder. Whisk it until it is nicely combined and there are no lumps.
  5. ⁠Soak both the slices on both sides in the french toast batter.
  6. ⁠Now, take a pan set on low- medium heat and grease it nicely with butter. Once the pan is hot, transfer the soaked french toast over it and cook it from both the sides till nicely golden brown.
  7. ⁠Take the whole slice of bread first, then place the slice with the cut-out center on top of it.
  8. ⁠Fill the centre with custard and sprinkle sugar on top of it. Brûlée the sugar with kitchen torch until it’s golden.
