SNICKERS PUDDING
 
 
Ingredients
  • 1+ ½ cup milk
  • 2 tbsp corn flour
  • 3 tbsp castor sugar
  • 5 tbsp peanut butter
  • ½ cup whipping cream
  • Caramel sauce
  • Peanuts, sliced
  • For the chocolate ganache
  • ⅓ cup (60g) dark chocolate, chopped
  • ⅓ cup fresh cream
Instructions
  1. Add ½ cup milk and cornflour in a bowl and combine well to make a slurry.
  2. In a saucepan set over medium heat, add milk, sugar, and peanut butter. Whisk well till the sugar melts completely.
  3. Now, pour in the cornflour slurry and keep whisking till the mixture starts to thicken. Cook for another 2 mins and take it off the heat. Let the mixture come to room temperature.
  4. Meanwhile, take the whipping cream in a bowl and whisk on high speed using an electric mixer till stiff peaks form.
  5. Fold in the whipped cream to the cooled peanut butter mixture. Do not overmix or the mousse will deflate.
  6. Transfer the mousse into a 700ml oval dish or any serving dish of your choice. Spread it evenly using an offset spatula and refrigerate for 20-30 mins.
  7. Top it with a layer of caramel sauce and arrange sliced peanuts over it. Refrigerate again for 10 mins.
  8. Meanwhile, make the chocolate ganache by heating fresh cream in a saucepan set over low heat. Once the cream starts to simmer, take it off the heat and pour it over the chopped chocolate. Combine well till you achieve a smooth and creamy ganache.
  9. Pour the ganache over the chilled pudding and refrigerate till the ganache sets.
